Sweet Potato Cobbler Thick Crust

  • Can't tell which is better the Peach Cobbler or Potato Cobbler! They're both a hit!
    Sweet Potato Cobbler
    Preheat oven 375F. Cook 40 -45 mins.
    3 large potatoes, cut into ½ inch rounds then
    cut into 4’s
    Boil to almost fork tender or 10 mins & set aside
    When done boiling potatoes melt 1 stick butter in cobbler dish & take out oven to cool while you make batter
    In separate bowl, 1 1/2 cup sugar & 1/2 tsp nutmeg
    In measuring cup mix slurry, vanilla & 8 tbs water
    ½ tsp vanilla
    2 tbs corn starch to 2 tbs water
    8 tbs water you boil potato in
    Sprinkle sugar and nutmeg over potatoes in cobbler dish, then pour slurry, vanilla and water over all potatoes
    Batter
    1 1/4 self-rising four
    1 cup sugar plus 3 tbs
    1 1/4 cup buttermilk
    Pour buttermilk batter allover cover potato
    Finally sprinkle cinnamon
    Preheat oven 375F. Cook 40 -45 mins.
