- EGG BROWN STEW RECIPE
INGREDIENTS
1.Eggs 3
2.Oil 2 - 3 tbsp
3.Big onion(chopped) 3 nos (4 cups)
4. Tomato 1 - 2 nos (1 1/2 cups)
5.Ginger(crushed) ½ - 1 “ piece
6.Garlic ( “ ) 4 - 5 cloves
7.Greenchilli(slit) 4 - 6
8.Salt to taste
9.Grated coconut 1 ½ cup
Coconut extract 1st ½ cup
Coconut extract 2nd 1 - ½ cup
10.Meat masala 1 ½ - 2 tbsp
11.Curry leaves 3 - 4 twigs
12.Pepper powder ½ tsp
PREPARATION
1.Slowly boil the eggs till done, set aside, shelled.
2.Saute the ginger garlic and green chilli in hot oil till transluscent,
continue sauteing adding onion, salt and finally tomatoes till
mushy.
3.Add the masala powder again saute well, add water boil well
till done.
4.Then add the 2nd extract boil, add the 1st extract just heat and
put off flame.
5.Stir garnish with curry leaves and pepper powder ,and pour the
gravy into the split eggs. Set aside.

Boiled egg with salt and pepper is a personal favorite. Rolled in a phulka when finely diced is almost my go to when I am hungry since it is quick to make than on ordering in.The potato stew with ginger is very unfamiliar to the rest of the country because ginger is too strong for potato to pair with, yet this stew is deliciously welcomed by vegetarians when served to a non maloo palate. Egg if not sliced does not absorb the flavors of the curry. For a family with vegetarians and non vegetarians we have to separate the both and it works for us. Thankyou
