    Direct heat is when you grill directly over the flame or heat source and used when you want to grill your food hot and fast. Direct heat grilling is great for burgers, brats, and steaks.
    Indirect heat is when you cook away from the flame or heat source. The food cooks low and slow and is ideal for larger cuts of meat, including ribs, brisket, pulled pork, large roast, etc.
