Yes, you can certainly get good long range views in Leicester! Let me know if you end up deciding to move to the area. Happy to help you find a place.

Not walkable? People walk for pleasure all the time on the more rural roads. Great biking! And we boast two places to eat. Gossets and what was the old Leicester Grill. Turkey Creek Cafe I think is what it's called now.

Walking the country roads is definitely an option! :) Typically when people refer to a walkable area (at least in the real estate world) they mean walkable to shops, restaurants, grocery, etc. so that's where I was coming from.

What is the price per sq foot on homes with acreage?

Good question though it's really tough to answer here in the mountains. It depends on a multitude of factors. In terms of the home itself, it depends on the age, condition, etc. In terms of acreage, it varies widely here due to the usability of the land. If you have mountain views, naturally your property value will be higher. Same with flatter usable land / rolling hills vs steep. Proximity to town and even road conditions play a role in price. Unfortunately there's not a good number I can throw out there in terms of price per square foot but I hope this helps in some way. Happy to help if you're considering purchasing a home!
