Nct U is the rotational unit of NCT, so there will most likely be different members every time. It depends who fits the songs best.
As you can see, NCT-U's "Boss" has 7 members -- Taeyong (NCT's leader, main rapper and dancer), Doyoung (main vocal), Jaehyun (main vocal, sub-rapper and visual) and Jungwoo (Main vocal) who are members of NCT-127; Mark (Main rapper and dancer), who is a member of NCT-127 and NCT-Dream; WinWin (lead dancer, sub-vocal and sub-rapper) who is a member of NCT-127 and WayV; and Lucas (rapper and visual), who is now a former member of NCT/WayV and is currently an SM solo artist.
"Boss" came out in 2018 and this was Lucas' and Jungwoo's official debut as members of NCT. This is how they were introduced.
When "Boss" first came out, everyone wanted to know who the cute blond rapper was -- the one who tips the chairs -- which was Lucas. But for us fans who have been following NCT since day one, we already knew Lucas. Lucas was actually first featured as an extra in NCT member Ten's "Dream in a Dream" solo MV in 2017 and we had seen him as part of NCT's SMRookies activities as well.
In the "Boss" MV, what I think you see being depicted in the ceiling of the dome is something to do with the fact that it is all a dream, as well as pretty much everything that is happening in the MV. The group's concept is based on dreams, so everything they do has something to do with being in a dream, dreaming or some sort of dream state, etc.
NCT-U was NCT's first sub-unit, which debuted in April 2016. NCT-U is made up of pretty much all the members, so, they just add and subtract members from all the other sub-units depending on the concept for the song. NCT-U songs span a wide range of styles and genres and can include anywhere for all the members or only 1 or 2 members. The U stands for United, but I also like to think of it as Universal because of the way the group never has a fixed number of members. This sub-unit is designed to be fluid, which means the group is constantly changing and rearranging its members.

NCT are kind of known for their Vlogs and several members pretty much document all aspects of their daily life, and SM posts the videos on its UA-cam channel/NCT's channels.
NCT is a group that is constantly changing and rearranging its members and sound and we never know quite what to expect from them. With a concept that allows the members to rotate between sub-units, changing, adding and subtracting members depending on the concept and style of the group or song, you should never expect the same thing from them. You are better off always expecting something new, that somehow, also ends up sounding very much like NCT. LOL
As you are discovering, NCT is one of the most internationally diverse groups in all of Kpop. The members as a whole represent 8 different countries and they speak 7 or 8 different languages. For example, there are 10 native Korean members (*Taeyong, Doyoung, Haechan, *Jaehyun, Jeno, Jaemin, Jisung, Jungwoo, and new members Sion and Daeyoung), *Mark is Korean-Canadian, *Johnny is Korean-American (from Chicago), 5 Japanese members (Yuta and new members Riku, Yushi, Ryo and Sakuya), *Ten is Thai, *YangYang is Taiwanese but he grew up in Germany, Hendery is Chinese from Macau (China) and 5 mainland Chinese members (WinWin, Kun, Xiaojun, Renjun and Chenle). However, they all live and work in Korea, so everyone speaks Korean fluently. Plus, many members have attended international schools or lived abroad, so there are several members who are also *fluent in English, on top of speaking 2 or more other languages.
So, this year is NCT's 8th anniversary, but debut dates are different for any number of members because it all depends on when they were added to the group. And many of the members of NCT actually became recognized by fans even before debut because they were part of SM's pre-debut group project called SMRookies (or the NCT-WISH members who were part of a reality survival show called LASTART), so SM did activities with most of the members before they debuted.
And just so you know, I'm pretty sure the "Boss" dance practice was filmed in the same dance studio as most of the other SM dance practices you have watched. The room is just so big that they can film in different angles and different parts of the room. I believe this is SM's iconic gold door dance studio at their old SMTown building where almost all of SM's dance practice videos were filmed between 2015-2021.
Almost all of SM's dance practice videos are filmed in the same dance studio for all of its artists and groups because it was designed specifically so they could film in the room.
In 2021 SM moved to their new state-of-the -art building, which is named Kwangya, in Seoul Forest. Therefore, now they film their dance practices in a new studio, which you may have seen in some of SM's newer dance practice videos. Unlike most dance studios, which are often in the basement of buildings, SM's new studio is on one of it's upper floors so the windows overlook the city of Seoul, South Korea. The windows in that room have screens that can be closed or opened depending on whether they want to be able to see out the window or to change the lighting or mood of the video, etc. Therefore, sometimes they have the screens closed to cover the windows and sometimes they are open.
SM's dance studios are iconic, everyone who knows SM, knows the minute they see the room in the video that it's an SM group. For example, SM's old SMTown building is now rented or owned by a different Kpop company and it's surreal to see that company's dance practice videos, because they film in the same dance practice studio and the room looks exactly the same as when SM owned it.
But that's not just SM dance practices, it's the same for a lot of Kpop companies. If you watch a lot of dance practices for groups from other companies you will start to recognize their videos because of the room they are in. For example, JYP Entertainment has an iconic dance studio that is bright red and the lights on the ceiling say JYP. YG Entertainment's iconic dance studio is dark grey and black and has a specific look and feel to it in their dance practice videos, etc. My point is that, when they film a dance practice video it's not just a random dance studio most of time, they are designed specifically for filming in and it's where all of the company's practices are filmed.

It was so swaggy and cool, and I was mesmerized by the guy in the Gucci shirt, who turned out to be Taeyong, the leader and my current ultimate bias in all of K-pop. I'd like to recommend NCT U's "Baby Don't Stop" as it was made the same time as this one. You'll notice similar sounds, and both MV's were filmed in Ukraine. Btw, it only has two members: Taeyong (the red-head here and white-headed center in "The 7th Sense") and Ten (the guy wearing either red or yellow/black shirt in the 7th sense). Thanks!
