If you have muffins,cupcakes or cake that turned out dense or dry use it in this instead of wasting it! I used some muffins that turned out dense and bad instead of bread and topped it with mango and peaches and it turned out amazing!
Excellent recipe I just made a big batch of bread pudding for the first time. It was made with apple bread and cinnamon raisin bread. The only thing I did change, and it might be something you could try is, I used eggnog instead of milk and I dropped off the vanilla. I also added a cream cheese glaze. It’s the time of year.
I'd like to add that as long as you have a dirty bowl, put the bread in the milk/sugar/egg mixture and let it soak, gently folding the bread from the bottom to the top for around 15 minutes. then spoon it carefully into the baking dish. The remainder of the bread and custard that doesn't fit, goes into a small pirex dish for the cook ......... This is the exact same recipe my Mom taught me 70 years ago.
I usually warm the milk, sugar and butter together on the stove so the sugar dissolves better (do not boil). Then I mix in the egg right before I put it on the bread. I also mix the cinnamon in with the bread before I pour in the mixture......it doesn't clump up like it does if you put it in the mix. We also like to add a half teaspoon of almond to the mix.
Using left over malasadas regular and cinnamon coated Portuguese delight. Poured the mixture over and added raisins. I’m waiting patiently- I can smell the richness of it baking

Bread pudding is soo good especially if u havent had it in a while!! This one is missing a drizzle of caramel and of course the cool whip or whipping cream, u can even add a fruit topping, I couldnt eat it without anything on top..This is a must try dessert tho just do not forget the cool whip!!lol

I would have added the bread to the mixing bowl then made sure the bread was well soaked with the mixture before placing it in the dish.
u still want a little bit of crunchiness on the top layer it'd be amazing that way. unless if course u preferred it completely soaked.
