The best authentic and appetizing homemade Mutabal (known as Eggplant Tahini dip) with Shaghig - Yummy by Shagh | Recipe Maker | Red Balloon Media
Mutabal is a cold appetizer, a very nutritious and delicious which is also considered to be one of the most popular Middle Eastern dishes. Although it has more reference to Lebanon and Syria, it is common in all the Arab countries as well.
Although it's Arabic origin, the taste of Mutabal is famous all around the world, and it is considered one of the most delicious and appetizing meals.

Ingredients:
2 eggplants
2 tablespoons of tahini
1 tablespoon of yogurt
1/4 cup of lemon juice
4 cloves of garlic, crushed
Salt
Directions:
Perk the eggplants a few times, place them in a baking pan, roast them in the oven for 40 minutes at 200 C degrees. Transfer them into a bowl and wrap in a foil, let them sit 15 minutes.
Then take the skin off, chop them finely,
prepare the dressing in another bowl, adding the Tahini, yogurt, garlic, salt and add the chopped eggplants by stirring well, serve with olive oil, pomegranate seeds and fresh mint leaves. Enjoy it with any kind of bread you desire.
