It's a wonderful idea! I've been to a restaurant where they offered a variety of carefully selected fruit juices in place of wine. I also have an idea for you: "What restaurants get wrong about tea". Ever been to a fancy restaurant with an expensive coffee machine where they sold you green tea that was extremely bitter and full of tannins? Many Western restaurants just don't have any understanding of brewing heat, brewing time, water quality etc. Let's change that! :)

I designed a tea flight dinner a few years ago for a business dinner, it was great and people loved the idea and tastes!
