Great cook again! This one is torture watching this being I won't be able to have supper with the family for another 45 minutes and I am starving. I would drive to Florida to have one of those at your food truck.
I gave you a thumbs up for the idea, but I’ll tell ya, cold rolled steel (Blackstone or Pit Boss) is much, much better for smash burgers. I never lose my crust on my Blackstone, but on the Sierra, I almost always lose the crust…just like I see on your videos. The nylon scraper simply isn’t strong enough and sharp enough to get under that deliciousness without leaving too much behind. If you are working with Pit Boss, I highly suggest you get them to send you a cold rolled steel version for the smash burger videos.
Boom!! Mark, I absolutely agree. We have had some success to get a great crust, but it’s a bit few and far between, where it was nearly always perfect on the cold rolled steel - we are definitely looking to see what we can do! The burgers are still so good, but they are missing the same crust we’ve had. Much love brother!🤙🤙
I made a similar version of this. Instead of making a smash burger, I made it like a NY chopped cheese. Mixed them together in a burrito and toasted them on the griddle. It was so good.

That combo looks mouthwatering. For sure on a must do list. I know you guys have tried a ton of crazy cooks and they all couldn't have been perfect. Have you ever thought of doing a " god this sucks, major fail video" ? I know Ive had a few ideas that sent us to the local fast food joint because the cook was that bad. We honestly have almost never have a video cook not turn out - although I may or may not have launched burned buns across the yard when cooking for my family…😂😂. But for sure, we’ll keep that in mind - we did some mini crunchy tacos that didn’t turn out, we called the video “All for Naught?!” - it showed how we messed up the process. Hi from Germany, this finely sliced Ribeye is completely unknown over here, although I can buy a Ribeyesteak.. I should give it try on my kitchen slicer, but I think the steak should be a bit frozen to do that. Is there something you would suggest to season the Ground Beef Chuck for Smashed Burger Patties apart from Salt & Pepper? Sometimes the beef over here is not the quality you probably have in the USA. They produce beef cuts from worn out dairy cattle which does not taste at all and is a fraud to customers. Cheers, Bernd

I have both the "Old" (with the lip) and the "New" (Flat) Blackstone burger presses. I normally use the Old one but I think I may have to try the New one more often. I realize you used the Pitboss press and it did an excellent job of smashing the burgers. Mine never turn out nice and round like yours, mine are all different shapes. But they taste good so I guess that is all that counts, Right? Oh, Almost forgot I placed my order for the cook book last night.

I watched you guys get picked up by Blackstone and you seemed to be happy and doing well. As time went on and you got picked up by Pit Boss your videos seemed to be different. You guys just don't seem as happy. And it really did seem disingenuous to me that you said that burger had a great crust. I even posted a picture of it on a Smash burger group and they couldn't tell which one was the one you flipped. Maybe I'm wrong and maybe you guys are happier than ever. As time went on and you got picked up by Pit Boss your videos seemed to be different. You guys just don't seem as happy. And it really did seem disingenuous to me that you said that burger had a great crust. I even posted a picture of it on a Smash burger group and they couldn't tell which one was the one you flipped.
Maybe I'm wrong and maybe you guys are happier than ever. It just seems to me that maybe you guys aren't and I'd hate to see that from two guys that seem like normal guys. I honestly wish the best of you guys, and I can tell that you care a lot because you read all the comments and respond more often than not.
