He's probably allergic to something else and has an epi pen for that allergy. An epi pen is not necessarily a "cure all" for anaphylaxis and sometimes people require hospitalization. I doubt he is so foolhardy as to really risk it for a joke in a video.

@@harshbing8123 Cocktail Chemistry and Binging with Babish began (regularly) making videos around the same time, if I recall correctly. The first predominantly torso angle videos on the channels came out within two months of each other, well before either reached any degree of success.

It's not sweet bread, it's sweetbreads. Though in the movie they call it veal stomach, it's actually the thymus or pancreas (likely the latter since it was described as stomach).
