    Also chicken must always be cooked to 75 degrees you also say celeriac Remoulade which would be correct but instead you use Kohl Rabi, so it's not actually Remoulade. This recipe has many flaws. I think it can be greatly improved.

    Soggy skin doesn't sound appealing to me. Could you have flashed fried the whole thing in some duck fat to crisp the skin? ;-)
