In terms of cooking - this guy is a dangerous fool. I am not saying he is without talent (although this recipe is as ill-named as it is ill-considered), but cutting raw chicken on a board and then putting the cooked chicken back on that board and also chopping herbs that are not going to be even warmed up shows that he does not really know the basic fundamentals of safe kitchen practices. I am no professional, I just cook family dinners in my house... but even so, watching what he did in this video made me wince. The idea that he is a teacher in a culinary school is terrifying; this is made worse by the fact that his 'school' is only a few miles from my house. How many hobbyists and/or chefs has this guy trained and how long before I am being served their food?
Place cooked chicken on the board on which raw chicken was filleted; the same for the tarragon.

you can serve it with a nice fresh salad (with standar vinagrette) with some croutons.. and a nice bread on the side.
And a decent splash of of e-coli and salmonella from the raw chicken slime that was added to the tarragon and cooked chicken during 'l'assemblage'.

I agreed, I am French and that's the worst terrine ever , if i can call it that way .Dry with raw shallots inside with no binding stuff inside ......
surely you dont put it in the fridge when the chicken is still hot??
last breast of chicken was still raw,also wheres the bacon to bind it?
