KAJU KATLI
Preparation time 10-15 minutes
Cooking time 15-20 minutes
Serving 2-4
Ingredients
2 cups chilled Cashew nut, powder, काजू
For Sugar Syrup
1/2 cup Water, पानी (3/4 cup max )
¾ cup Sugar, चीनी
½ tsp Cardamom powder, इलायची पाउडर
2 cups prepared cashew powder, काजू
1 tsp Rose water, गुलाब जल
1 tsp Ghee, घी
Few Saffron strands, केसर
For Garnish
Silver vark, चांदी का वर्ख
fresh Rose petals, गुलाब की पंखुड़ियां
Process
In a small mixer jar, add cashews, grind to smooth powder. keep aside.
Now, sieve the ground cashew powder.
For Sugar Syrup
Now in a deep non stick pan, add water, sugar, cardamom powder.
Keep the flame on low and keep on stirring to form syrup.
Stir the sugar syrup till it forms string consistency.
Now, add the sieve cashew powder into the sugar syrup.
Mix it well, add rose water and mix till it starts releasing from the pan.
Once the cashew paste turns to dough, leave the pan and add ghee.
Continue to mix till the ghee melts completely and cashew dough is formed leaving the pan.
Switch off the flame. and grease the butter paper with ghee.
Transfer the cashew dough onto the butter paper.
Grease your hand with little ghee and knead for 30 seconds.
Once you get smooth dough, cover with butter paper.
Take a tray and press to form a uniform layer. Spread some saffron strands.
Then roll the dough with a rolling-pin, adjusting the thickness according to your choice.
Now, cut the dough into diamond shape or the shape you wish for.
Garnish it with silver vark and rose petals.

Broo the when i saw ur first video just with that smile I felt like this guy have been through ups and downs of the life then when I watched ur josh talks I felt very much connected . *A small tip for those who are struggling to make fine cashew powder like me and then the mess to seive it. Just grind your cashews with the sugar this will easily make the fine powder then you can put milk/water in pan and cook it. Also take heavy pan because it burns real quick in thin pan and stir constantly till it become thick but not too thick because it will get too dry after cooling.*
There are so many channels that teach cooking but yours are different... I love the rustic touch, very chilled out way of explaining everything & close to the roots better than all those channels with fancy studios and shiny crockery 💕
I tried to made kaju katli today 3 hrs before this recipe was released using someone else's recipe.
I started of making kaju katlis but ended up making kaju laddus as they became really hard.
I regret it but am glad that we have a chef like Ranveer brar sir.

Thank you Chef Ranveer. Absolutely Fabulous Recipe. This made me the best Kaju Katli ever. Perfect texture, perfect chewiness, perfect sweetness and also perfect flavour. The colour is darker than commercial varieties but I guess those use chemicals. Tried Badam Katli as well but that has turned a bit softer. If possible do a separate video for Badam Katli. Happy Diwali and Happy Gujrati New Year.

Every time I see (observe and ruminate) a recipe made by Chef Ranveer Brar, it, slowly and gradually, concertises the fact that cooking is an art that requires thorough observation, research, and experiential learning - cooking is a science; the chef is scientist/chemist and each ingredient being a chemical in itself, which brings a distinct taste and an aroma when mixed in a particular concentration and quantity. Furthermore, if we closely examine age-old recipes, mostly made of perishable items/fruits and vegetables, they were more an idea for preservation (e.g pickles, aam papad etc.) than to be served as a delicacy.

It's been 13 years I always watch only Ranveer's recipes to make any new thing in food.....he is the best......❤
Very well done! To the point, with some great technical tips on the sugar and kaju chemistry together. These are very pro tips and much appreciated! Also, I liked the exotic touch with the cardamom (elaichi) that always gives a Mughal flavor to food. Saffron and rose petals and essence are luxurious touches, superb!
"I am from Lucknow, so I need some rose water and elaichi" - you captured the essence of Lucknow.
Some tips to be healthy:
1. Do not use white sugar. This is very unhealthy on many levels. Use Stevia or Monkfruit extract instead which has 0 glycemic index.
2. I would not use silver foil called 'Varak'. Here are 3 good reasons why:
a. Nowadays, it is aluminum not silver. Traces of heavy metals like lead, copper, nickel are found which are poisonous.
b. Process of manufacturing involves using the intestine of ox-gut. These ox-gut are obtained from slaughter houses.
Then, it is hammered there under unsanitary conditions. Mild traces of blood and flesh on foil are often present.
c. Ingesting large particles of silver can lodge under your skin and give you a permanent and irreversible medical condition called Argyria. Your skin turns blue grey. Its not harmful but not pretty either.
My sister is diabetic she uses Stevia too or sometimes monkfruit sugar . I’m diabetic too .
@@minatran3652 Diabetes is a self inflicted disease and can easily be cured. Watch Dr Eric Berg. It is the rice, bread, noodles, pasta - we eat mountains of this stuff. Stop eating that! Eat meat, vegs, eggs, yoghurt, nuts, fish instead. Completely eliminate carbs and sugars. Including sweet fruits. Fructose is the worst sugar. Stop for 6 months, exercise HARD daily, and fix your diet. Also go to sleep early for 7-8 hrs, and cut back on stress. This will reverse your diabetes and heal you. By the way, diabetes is not a single disease. It is part of a bundle of problems that come from Metabolic Disease. Every possible disease condition comes from blood sugar being too high, insulin being too high - including hypertension, Alzheimers, dementia, stroke, heart disease, fatty liver, high cholesterol, etc. If you can think of a disease, it comes from high insulin. Cut down the insulin response and all disease vanishes. So, when you say you are diabetic, change that to - "I made myself Diabetic due to laziness from not working out and eating too many sugary/ starchy things". Once you accept that, the cure is simple. This is why diseases run in families. They are not hereditary genes. They are passed down in our food habits as hereditary diets. Pretty eye opening, isn't it?
