You need to keep calling and emailing - ensure that you are showing your passion in your enquiries by researching the clinicians at the practice first - this'll improve your chances
Also you can look for online work experience and volunteering opportunities

Yes GCSEs do matter as you are assessed holistically . With your 5’s it is dependent on the subject and you will need to enquire with the universities you intend to apply for to gain more insight !
