    Joe I am a simple man with a simple life. Don't need a big mansion on the hill to be happy. I grew up in a 2 room house in the mountains of Colorado. My kitchen is small but that can't keep me from cooking great Italian recipes. I love this Veal Parmigiana Reggiano recipe with pasta and sauce. I thank you very much for your support of the Bald Chefs channel and your outstanding incite , and comments. Thanks Joe.

    Even though this video is nearly five years old I feel I must comment. For all the haters that are picking on one aspect or another on how he cooks this, SO WHAT!!! Every family and restaurant in every country of the world prepares dishes to their tastes, there is no one way of making any dish. This is The Bald Chef version of this dish. There are a few changes I would do to make it to my tastes, but that doesn't make his version any less worthy than mine or yours, just different.

      Thanks for your kind words on my Italian veal recipe. Cooking food is an art, you can put toghter the recipe any way you like. Is the sun and moon right or wrong.....no it's just there. Like my take on this recipe , is it right I don't know just my version is there....Cheers!

    Believe me after watching this vid I can take it you be amazed on my knowledge of Italian food been around some great guys not all chefs just regular people the had the skill passed down generations in their families in both northern and southern styles. Most of them own their own restaurants in my town.

    Oregano can be left out of this recipe, there are many in the school that say Oregano and Basil should not be mixed. It will not change the recipe for Veal Parmigiana Reggiano at all. Give this recipe a try. Thanks for posting!

    It's spelled Panko and should be easy to buy I know that sell it in the local grocery stores in my area. I love the light flaky crust it produces and you can season it as you please. Great stuff. I hope that answered your question. Thanks for stopping by!

    Thanks man I love veal recipes and this Veal Parmigiana Reggiano recipe is the real Italian way to cook veal. Plated with some pasta and sauce how can you go wrong? If your mom was from Italy then I hope this recipe came close to what you think a great Veal Parmesan should taste like. I never want to out do Mom but this was my best try cooking a Italian classic recipe. Thanks and keep on cooking!

    Well I watched your video, just wondering before I begin do you watch Italian chef videos and if so is that where you get your lines and accent the fake one that is. You use the right ingredients but every true veal parmesan has veal and sauce and cheese cooked all together in the end for true perfection. Your dish looks like fried veal with cheese with pasta on the side, a far cry from veal parm traditionally.

    5:02 Ok sry, but THAT has nothing to do with mozzarella. I don't know what it is and I'm surprised that a "chef" doesn't recognize mozzarella - but I have to stop u there.
    btw, what kind of parmesan cheese did u use? It looks quite pale to me. Is it Reggiano or Padano?
    5:51 Those Fettuccine look overcooked - are they al dente? What kind of fish did u put in ur marinara cauz to me it looks like spiced tomato sauce. Real marinara has to have some kind of ocean-relation. No olive oil to prevent the pasta from sticking and add flavour?
    If I would try to put a big chunk of veal like that on pasta my italian family would literally kill me. Its an insult to italian cuisine - nothing more.

    That's completely wrong. An Italian recipe? Are you for real? No one in Italy will add sauce on cooked pasta, without mixing them in a pan. And, for all that matters, no one in Italy will ever put the meat and the pasta in the same dish. About the Veal Parmesan, this is not the way you should prepare it

      I will say one thing my friend, there is nothing completely wrong in this world.You witnessed the American Italian version of Veal Parmesan. You probably have never been in America before, and my channel, especially my Italian recipes are suited for Americans tastes not Italians. I absolutely believe there's validity in what you're saying, it just is not relevant to my audience. 1st off Italian viewers, are not going to be watching an American cook their indigenous meals.. They are to be watching Italian's, cook this Veal Parmesan as it may be served in Italy.

    Another thing you seemed to be gasping for air in this vid to much to drink? It would explain the outcome of the dish. The panko bread crumbs is a good idea but you didn't put enough pepper in it to make a difference and that was more than more than a tablespoon of salt. My favorite part was when you said "Orrreeegggaaaannnooo" come on man I am Italian and I don't even talk like that. So in the end if you want to show people a dish to make , make it right even fucking olive garden does shit man and they really suck. I will check on this later feel free to comment on how you feel.

      grande mac unlike most, it is give a thumbs down, at least you get the guests say which feel. I don't, entirely agree with what you're saying, but every man has a right to their opinion. My only question to you my friend is where your videos? I can definitely learn from corrective criticism. That's why I don't take a hard line, for truth tellers, or people that believe they are right. My fight if there is a fight, is those silent, thumbs down to the people, that will not reveal their self. I am who I am, and no one can take that away from me.       Bobby I am not sure but I believe the Wolfman is actually a wolf woman, or maybe a woman that wants to be a wolf. Any rate, the school systems have you fail this poor soul or she is from a foreign country and has not taken the time to go to school and properly learn how to write. If I had her afflictions, I would never put up such preposterous comments that even the most intelligent linguists would have problems deciphering. But I'm sure there are others out there that would read this comment and know exactly what the hell she's talking about. Unfortunately I do not personally know of any such people that can help me so I really never got a chance to respond to this what person wolf person!

    Weak recipe! Only one type of cheese? B:LAAA! No sauce during the broiling phase? Come on!! This is a recipe for the everyday house wife- not a chef!

      Julie if you're going to disrespect someone's work make sure you have your facts straight, for if you don't any credibility you may have possessed will instantly disappear and you will simply be an armchair critic. I take corrective criticism and utilize it to correct what I have done wrong, and I take a special notice to people that give me such corrective criticism that do it in a fashion that is respectful, and they themselves are experts in the area of discussion. Reviewing your channel you have no cooking videos based on this fact I assume you are the housewife cook. Now let's turn to the recipe itself take note , there were 2 cheeses used in this recipe. Clearly, if you watched the video you did not pay very close attention to detail.Do you think if you put the sauce on before the cheese or the sauce on after you broiled the cheese to melt it, would it taste different. The answer is absolutely not my technique. Is this recipe for Veal Parmesan weak well, UA-cam doesn't think so type in the Veal Parmesan recipe and my recipe comes up 1st. One might ask themselves why would this be because we have an incompetent chef that used only one cheese, and didn't put sauce below the cheese, doubtful no absolutely impossible. My work stands for itself, it is beyond reproach. I stand behind this recipe and it's a good one. Obviously, you are entitled to your opinion and it is just that an opinion of my rendition of the recipe. You should tone down your approach, you'll be far more successful, and might even find happiness along the way, take care now.
