    Ingredients For Lahmacun with filo, phyllo
    4 yufka (phyllo / filo sheets) use thickest to make borek, savory pastries. You can use 2-3 or more layers if yours are thinner to make it thicker that can hold the topping.
    For minced meat topping:
    200gr. minced meat, beef or mix of beef and lamb (at least 20% fat would be better for a taste)
    1 small onion
    1 small each sweet green and red peppers (use bell pepper if you can't find the ones we have here in Türkiye)
    2 cloves of garlic
    1-2 medium-size tomatoes
    handful of chopped parsley
    little less then 1 tsp salt
    1/2 tsp each cumin, black pepper, pul biber (chili flakes), paprika, sumac
    about 3-4 tbsp olive oil (depending on the fat amount of your meat)
    1 tsp each tomato (domates salçası) and pepper paste (biber salçası)
    For the vegan lahmacun topping:
    2 medium size eggplant (grilled)
    Same ingredients of the classic topping except the meat
    note: use more olive oil since the topping doesn't have any other fat content.

    Wonderful variations of Lahmacun! I love the idea of roasted eggplant as a base ingredient! 💜 I’m not vegan but I’m a big fan of eggplant in any recipe!       SoCal neither. Maybe not that many Turks left home. We get folk leaving turmoil more - Iranians, Pakistanis, Indians, Afghanis, etc.

    I have some phyllo sheets in my freezer so this recipe comes at a good time. I can’t tell, are the peppers you use spicy or are they like bell peppers we have in North America? Thank you for wonderful recipes.

    This will be so yummy, I'm excited to try. 😋 How do you freeze your parsley greens? And any of your other kinds? They looked so fresh and green coming out of the freezer bag.

      Thank you! After I wash and dry the parsley leaves by itself I simply chop and put it into a freezer bag. It is simply and very effective way to use it without wasting any 😊

    I am very eager to try this. I added 2 Tbsp flour and 1/2 cup water to the recipe as you instructed. I was in Türkiye last October but never got to try Lamacun

    Never have I ever eaten lahmacun. But I know your earlier recipes with fresh dough. Could it be that this variant is crispier, but also drier? 👍👍

      It comes very crispy. The topping wasn’t dry but it took a bit more time to bake the top and then bottom so it can get dry when it’s over baked

    Olá 🌻🇧🇷, parece maravilhoso ! A massa tão fininha e crocante! Eu gostaria de saber fazer essa massa, aqui no Brasil só é possível comprar a massa em cidades com grande número de imigrantes turcos, longe de onde moro. Penso que essa massa é realmente um patrimônio da cultura turca.

    thank you so much for your lovely recipes! i made the vegan version yesterday, it came out great! i followed the measurements in the description but only used one medium eggplant, and it was still plenty enough for two 40x24cm sheets :) instead of yufka/phyllo sheets i used ready-made dough for "tarte flambée" ("Flammkuchen" in german) which is thinner than tray pizza dough but thicker than yufka, and it's with yeast but it still comes out quite crispy.
    it's funny that your husband didn't realise the lahmacun was with eggplant because the very first thing my girlfriend said was "ooh strong eggplant flavor! yummy!" :D

    You didn't clean the chopper after you chopped beef so the vegan mix is not vegan.

      Yes that’s right. Because we are not vegan we ate from both versions so I didn’t need it. If I would do it for a vegan friend or guest I would begin to make the vegan topping then the one with minced meat. Or simply wash it. 😊 thanks for reminding still

    Great idea with the yufka. I made it from scratch before making my own dough but this is a much quicker idea. Just one thing if you are making vegan you should put it in the mixer first as I noticed you didn't wash out the mixer before making the vegan one. I'm not vegan but just thinking of my vegan friends. 😊

      Glad you liked. Thanks yes I would wash the food processor or make vegan topping first. Since we ate the vegan filling ourselves and didn’t serve to and vegan person I didn’t mind it. Thanks
