Absolutely brilliant! This is how most of us cook; basic ingredients and equipment. Love the fact that the Vitamix is an old workhorse and not a shiny new ‘supplied’ one for the demo.

First recipe I made today in my new Explorian, which replaces my Culinary Institute's pro model that my late husband bought for us years ago. Recipe came out super fine. Here's a tip. I found the pearl barley in the hispanic food section of Walmart. Really works well to thicken it up as he said.

I did the parmesan, but added 1/4 cup fresh cheddar as well. My vitamin has a soup button so I just used that. I added the recipe to my keepers file. :). Thank you so much.

First, I replaced the milk with an organic oat-cumin broth since I'm lactose-intolerant. Then, due to space constraints in my small fridge I decided not to buy the celery, so no celery. Also, no onion or Mrs. Dash. I also omitted the salty soup cube altogether since I'm watching my sodium intake. For taste I relied on a couple of extra garlic cloves and the cumin in my broth. I appreciated having the pearl barley to thicken my soup. I enjoyed 2 cups of this soup with a few organic pita chips. Then, I filled a 1-cup container with most of the rest of the soup. As a frugal tip, I added water to my Vitamix to collect the remaining soup. That's enough to enjoy 2 more servings of soup with future meals.😊
this was actually the best broccoli soup recipe i've ever found. I didn't have the pearl barely so I'm looking forward to trying that to thicken it up.
YUM!!! Well done 😊. Great tip about the pearl barley. Tip… if you want to clear up the film on the inside of your container, use a damp magic eraser (original) and “polish” the inside. Be careful of the blades and you might need to do it twice. Then, just dry it w/a microfiber cloth after each use or two.
I hope Vitamix is still giving you money from this demonstration! I'm watching and all I can think is, "YES! I need to go out and buy myself a Vitamix so I can make this soup!"
Just got out vitamix today, your soup recipe was the 2nd thing we tried. Chicken bullion in place of beef, no coldslaw, added a touch of cream, no garlic, my wife's alergic. Also added some canned chicken. It was very tastey, thanks. Oh yeah added a little summer squash and some flax seed, didn't have barley.
Just tried this with my new toy. Amazing even if I did forget the cabbage. I see what you mean about the broth taking on the flavour of the vegetable if you put too much in.

Just made this with the raw broccoli and it definitely had that earthy, raw broccoli taste overpowering it. Definitely trying steamed next time. Also, if you're trying to go for a Panera copycat with this - the cheese will make or break this dish. I used a vegan cheese (Violife) and it really didn't melt and I often got chunks of carrots and cheese to chew through rather than a velvety mouth feel.
I definitely prefer the steamed broccoli. Way better tasting. I find the Daiya cheese melts pretty good if you do the vegan version. Thanks for commenting and watching!

Dude- you think you have a classic? I have a TNC- when they were called Total Nutrition Centers from the early 90's. It is a work horse- still chugging along. Saw a demo at the Indiana State Fair and had to have one!!! It was a lot more expensive then. The ones now you can get 300 at Costco. I think I paid over 600.
I must have done something wrong. Only my second use with my new Vitamix. The first thing I made, a smoothie, turned out great. This soup? Well, I think I used too much pearl barley, too big a garlic clove and maybe my onion chunk wad also too big. You are not kidding about a little goes a long way. Maybe I'll stick to smoothies for a bit.
Just bought the E310 today at Costco. But it doesn’t have a soup or ice cream setting😕 I see that your didnt either yet it made hot soup! Do/can you make smoothies too with your Vitamix series?
You don't need a soup setting, you only need to run it on HIGH speed for a long time.... Like 5-6 minutes. If you start with hot water instead of cold, it will only take about 3 minutes. Hope this helps!
Thanks Brian. Quick tip meant respectful. Go buy mr clean magic eraser and use it on inside outside of your blender will look new again in about 5 minutes:) just did mine from used one got on ebay. Have good day.

This soup flavor is good, not on par with Panera, they must have some secret spices, I've seen others putting an entire block of sharp cheddar cheese in the pot style, I'll have to try doing a full 8 oz block next time. Had a good flavor, I'm just partial to the Panera recipe.
Me neither. Just extra veggies I guess. It was part of the recipe when I used to sell the machine at roadshows. It doesn’t have a strong flavour so it won’t change the taste of the soup and it gives more fibre.
Silky smooth, thick and tasty, but I need to put a warning up. I used one clove of fresh garlic with the skin of course and man oh man talk about a strong flavor! I'm going to be burping garlic all day! The soup was easy and delish, hold half a clove of garlic. Did anyone else find this to be true?
For me, I love garlic so this wasn’t a big deal for me but I totally understand if people don’t want a strong garlic flavour. In that case, use a half clove like you did.
why does your container look so gross? is it from your water or maybe from making hot things in it? I don't want mine to get dirty, yellowed and cloudy like that.

Resistant yes. STAIN-PROOF? Probably not. I'm not sure. I just got my Ascent 3500 and I don't put that stuff in it.... I use the stained Vitamix for that! 😂
Yeah, I’m just taking your recipe and subbing oat milk and vegan cheese for all of the cows breast milk products because I’m not a baby cow and don’t have the same nutritional needs as a Calf 🥰 also a stalk of celery is generally 2 pounds or so a rib is the individual stick within the stalk :)

Btw high setting is equivalent to 10, no need to use the dial if you turn it high. Thumbs up
Not on mine. You can max out the dial but the separate button is clearly a faster speed. Maybe the new ones are different. Mines about 15 years old

Don't like the ingredients in the cubes. So, can a vegetable/chicken/beef broth be used instead of it and even the milk??
Absolutely! This is more about the process than the ingredients. However, make sure you use some sort of broth or the soup will taste like garbage!
I have a question. Can I grind turmeric in it? I know turmeric stains but want to make sure before I mess it up😊just in case you know
You can but like you said, it will stain. You will also need the dry blade unless you have an Ascent series and you have the blending bowls.

You could try arrow root powder. That's what I use to thicken gravy for my sister-in-law who is also gluten-free. Maybe corn starch?
I made it with raw and it definitely should be steamed broccoli. Didn’t enjoy the raw taste in hot soup.
