Delicate Pan Fried Salmon With Creamy Lemon Orzo

  • Beautifully seasoned, tender, pan-fried salmon, nestled in a bed of creamy orzo with lemon and parmesan. It feels like a really special dinner, yet it's quick to make and all cooked in one pan (no pre-boiling of the orzo needed).
    I love to use orzo as an alternative to risotto for a dinner that cooks in far less time!

    Ingredients:
    Salmon and spice rub:
    ▢4 salmon fillets
    ▢1 Pinch salt
    ▢1 Pinch garlic salt
    ▢¼ tsp black pepper
    ▢⅛ tsp paprika
    ▢½ tsp dried parsley
    Orzo:
    ▢2 tbsp olive oil
    ▢2 tbsp unsalted butter
    ▢2 cloves garlic - , peeled and minced
    ▢230 g (1 cup plus 2 tbsp) dried orzo
    ▢480 ml (2 cups) chicken stock
    ▢60 ml (¼ cup) double (heavy) cream
    ▢75 g (¾ cup) grated parmesan
    ▢Zest and juice of ½ a lemon
    ▢¼ tsp salt
    ▢½ tsp black pepper
    To serve:
    ▢Small bunch fresh parsley - , finely chopped
    ▢Lemon wedges
    ▢Black pepper
    Process:
    1. Place the salmon fillets on a plate.
    2. Mix together the salt, garlic salt, pepper, paprika and dried parsley. Sprinkle onto the top of the salmon and pat it down, so it sticks.
    3. Heat the oil and butter in a large frying pan (skillet), over a medium-high heat.
    4. Add the salmon fillets, skin-side-up (so the part coated with the spice mix is in the oil).
    5. Cook for 3-4 minutes, until the salmon is golden brown, then remove the salmon from the pan and place on a plate, skin-side-down (we'll continue cooking it shortly).
    6. Turn the heat down to medium and add the garlic to the pan. Cook for 30 seconds, stirring constantly, so the garlic doesn’t burn.
    7. Add the dried orzo to the pan, stir with the garlic, then add the chicken stock and stir again.
    Nestle the salmon fillets into the orzo, skin-side down.
    8. Turn the heat back up to medium-high and bring to the boil, then turn the heat down and simmer for 8-9 minutes, stirring occasionally, until the orzo is al dente (cooked, but with a little bite). You'll need to move the salmon with a set of tongs to stir the orzo underneath, so it doesn't stick to the pan.
    9. Add the cream, parmesan, lemon zest and juice, salt and pepper to the orzo and stir together.
    10. Turn off the heat, sprinkle on the chopped parsley and a little black pepper. Arrange the lemon wedges in the pan, then serve.

      Fish fingers. I don't eat enough fish to be fair. Because if I get a bone I throw the whole thing out. I do not like bones. I just have a thing about fish bones I just can't get over.

      @@tramekn I can't do tilapia. It tastes just like the muddy part you're supposed to remove from catfish. That's no surprise being that it's fed other fish's poo.

    Tonight's dinner! Only thing I'll do differently is not return the salmon to the pan until the orzo is almost cooked. It will be much easier not having to keep picking it up to facilitate stirring the orzo. That salmon you used is a beautiful deep color😍

    This recipe was my dinner and it was delicious! I am a 1 human household and I did not have a pan that seemed the right size for 1 serving so I made the orzo in a saucepan and pan-seared/oven finished the salmon (my usual method for salmon) ... and then put them together in a pasta bowl. I maybe missed a bit of the texture/taste by doing them separate but no complaints. That lemony-garlicy-herby lightly creamy orzo is wonderful! And it all comes together very fast even if I did have 1 extra pan to wash :)

    Thank you thank you thank you for this lovely idea I live in New Zealand so I Buy Marlboro king salmon slow roasted over aromatic wood you can have different flavours I had the chilli as I’m only one person I halved it and halved the garlic chicken stock orzo usually have the salmon cold but I Did what you did and put it in the stock I was gorgeous I always have one of the salmon in the fridge couldn’t believe how quick the dinner was tomorrow night I’m having lemon thyme and dill salmon can’t wait this is gonna be a great thing to have in my house all the time never cooked orzo before You were recipes are always beautiful and so quick thank you once again Christine originally from Wales but now live in New Zealand

    nice. i dont even really like lemon and this was so appetizing.. i watched the video. it makes me want to eat something with lemon. i love salmon and the orzo looks really good with the cream and parmesan. nice recipe. the only thing i would leave out is the lemon zest and replace it with some lemon juice. great idea for a family friendly dinner.

    I made this today, I halved the quantities but, stupid me...I forgot to halve the amount of lemon 🙄 and it was too lemony, but I managed to eat most of it, the salmon was delicious I had some mixed vegetables with it, I'll definitely try it again 😊

    Hi Nicky.....love you, your videos and I especially love your quick, easy to prepare and tasty recipes. Many are on regular rotation ( mostly the 30 min. Meals ). I love orzo, make it often but have never made it using salmon. Can I omit the cream and add juice of half a lemon instead?? Thank you 🤗👍💕

    What is your go to way to scale fish? I gently run a knife over the fish while holding it under running water ( to minimize the scale flying off in all directions) with a colander to catch the scales so the don’t go down the drain. If there’s an easier way I’m up for it!

    Dish looks yummy but you didn’t descale the salmon skin?? I’ve seen in your other salmon videos you never remove the scales off the skin and then remove the skin later, but u cook the scaly skin in the recipe and surely the scales would mix in the food, definitely not pleasant!
