Italians usually don't put cheese if its a pasta with fish, some people ofcourse do it but it takes away the flavor of the fish. Pasta dishes with meat they add the cheese because then the cheese is an enhancer of the meaty flavor. We in America adapted the ways, pastas loaded!!!! with sauce and cheese 😂😂 but while travelling through Italy I mean very traditional and sophisticated tutti bene e molto delicato.. They really don't go heavy on the sauce or cheese its sort of like everything is harmonious and all the flavors come through.

This is very close to my recipe "SCREWED UP TUNA" the only difference is I cut lots of onions, bell peppers (different colors), mushrooms, and if I have it peas and carrots (either frozen or from a can). However, I include the water from the tuna from it's can. I also use for my seasoning "POULTRY SEASONING" . I use the fisilli (corkscrew) pasta hence why I call it "SCREWED UP TUNA" . I do not add any cheese. I made it one saturday evening and my brother in law family paid us a visit and I made a huge pot of it. By the end of their visit at the end of the evening, it was all gone. You Lidia, helped in that I too let the pasta cook in the sauce. I like using tomato paste. HERE'S A TIP- to get all the tomato out of your tomato paste can, open the top can and remove the tin that you cut off, turn the can over preferably over the pan and open the bottom but do not remove the tin part-take the tin part and push it through the can removing the tin part after all the tomato is in the pan with the tin part (you can remove the tin part here now). You can do this with all other canned items to assure you'll get every drop.

Using a strainer to remove the pasta is VERY important from a safety aspect, especially for the elderly. NEVER lift the pot of boiling water to pour into a colander! A very nice video. And a scrumptious dish ! The only thing I use is freshly ground pepper after serving.

I am not paranoid.. nor anxious... ot is just I am worried about “that big pot of boiling water on your stove... shoulder level as you stand beside it as you scoop out the pasta... it is kind of scary....really... Is it not possible that your pot sits on a stove where you have to stoop down a bit instead of with arms raised as you scoop out the cpoked pasta? With a slight push... or jerking of your arm... ahhhh... you know what I mean? Just a friendly word of caution ...

In my opinion she uses too much olive oil. You don't need all that with tomatoe sauce. Also, my impression is that she usually undercooks the sauce and the rest. Anyway, I make pasta with tuna (and of course olive oil, garlic and pepper) even without tomatoe sauce. In that case I use more olive oil.

Don't like the way she 'drains' her pasta. There is still water inside when you do it this way and it waters down the sauce. I prefer a collander so you can shake a lot of the water out.

If you rinse it you wash away starch. The help the sauce stick to the pasta. The oil makes the pasta slippery so again the sauce doesn’t stick.

Thanks for watching! You could use regular American tuna, but the results will be better if you go with an Italian canned tuna packed in olive oil.
