    Sorry I haven't been watching the last few videos as I was in Tokyo :) So watching everything back now.
    I now realized I never put broccoli in an omelet. I usually boil eggs and mix them with the broccoli to make a salad, but the omelet looks great and for those who prefer to have a sandwich in their bento this would be a great sandwich filling. I have made the miso peppers often but I add eggplant, never had it with only peppers. As bread is what chicldren take to school here I mostly give my daughter sandwiches. A fabourite is my take on Korean street toast. The only thing is my daughter doesn't eat the cabbage raw and the hot sauce. But in the omelet I mix in grean onions, carrots and sometimes some cabbage and put that on bread spread with some mayo and top it with some cheese. I also try to include some begetable side dish.
    For me it's true that getting into making lunch or bento again after the summer break is something I have to get into again. We only have 1 week vacation left before school starts again in our area so I'm going to start planning what to make next week (also for breakfast).

    Having the kids help make their own bento is a great idea! Bet that encourages them to eat it if they make it. The flourless okonomiyaki is great! I will try that along with the dashi pickles with my bento this week. Always looking for new ways to use up those veggies. 🥰

    I'm really excited to try these recipes! It's a good idea to keep making the bentos every day even during break--I always found it really hard to start up again after break time. I always see the little vegetable buckets the Japanese schools where I work--my students are doing cherry tomatoes--it's fun to see them enjoying planting and learning about where food comes from. I wish that would be incorporated into the American education curriculum. I only had access to home economics so I could learn about cooking as an elective in junior high--I think it's so great that this starts in elementary school in Japan!
