Catching and Cooking Rare Eels with Jujumao

  • This might be Jujumao’s greatest cooking challenge on this channel! On this episode, Juju is discovering the wonders of the Giant mottled eel (Anguilla marmorata) and is going to try cooking a few dishes with it. Also known as the Bago River Eel or Sili-Sili, this curious-looking local eel species can be found in the province of Negros in the Philippines.
    There’s a lot of work that goes into cultivating these local species of eels, so we want to pay homage to the local artisans by cooking the best meal out of their harvest. The pressure is on, and the big question is: can Juju cook his very first live eel? Stay until the end to find out!

    We call it "kasili" in Bicol. Unlike seasonal fishes which breed on rivers and return back to the sea for the rest of their lives, eels do the opposite. They breed somewhere in the ocean and journey to the freshwaters where we capture some of them using electricity.

    Kasili tawag nito sa Bicol. Ang hirap dakmain nyan sa sapa. Pero kahit challenging nakakaenjoy sumama sa paghuhuli kasama mga locals. Okay din ito ihawin pang pulutan.

    The BICOL Express EEL was a revelation for Bicolanos like me! Thanks for sharing Chef JUJU!! . . . BTW, the eel bones for the SISIG wont be a problem. . . I'll make a double deep fry until the chicharon crispness is reached! More power!!

    I've cooked this japanese style, streaming it and griling with a sweet type soy sauce. Pretty much unagi. Give it a try next time

    Is it the same species that used for Japanese unagi don?

      I actually like unagi don but I find it expensive and I keep seeing eels in PH.

    To get the sliminess out, rub a generous amount of seasalt. Wait a couple of minutes. Then rinse. Enjoy!!

    I have seen videos from Japan where they kill the eels by chilling them in ice water first before cutting them up. UA-camr Kimagure Cook does this. Could be helpful to you.

      @@aniniputm1216 pag bicol express po dito sa bicol may kasamang fresh alamang (balaw) and yun ang dominant ingredient sa dish. ang protein (any) is for flavor lang.
      pag wala naman alamang (balaw) ginataan naman ang tawag sa dish. any protein or gulay na may gata. just like in the video, since si eel ang main ingredient, ginataang eel na sya.
      iba po kasi yung lasa nya, pag dumadayo dito as tourist iba ang expected flavor or dish compared sa order nila 😅
