I love the vision board on cards! My word of the year is "accept." (Accept help, accept my body, accept people as they are, etc.) My meal planning hack is theme nights. It makes it easy for me to know every Monday is pasta, every Tuesday is Mexican, Friday is pizza, etc. It doesn't have to be the same every week. Maybe this monday's pasta is spaghetti, next week is mac n cheese, after that lasagna. Whatever. But knowing what themes we have for each night cuts down on the amount of decisions I need to make and lowers our grocery bill because it lets you take advantage of sale prices and buy one, get one deals, etc. For example, if there is a BOGO sale on tortillas or salsa I will buy a few while half of them are free because I know will make tacos this Tuesday, enchiladas next Tuesday, quesadillas the next Tuesday and even though there is variety throughout the month, it's still the same ingredients. You get the idea.

In terms of meals - one of my favourites is burrito bowls. My kids love them because they can pick what goes in (great for picky kids), and it's pretty cheap. We use cheese, rice, salsa, greek yogurt (instead of sour cream), ground beef/beans with taco seasoning, onions, bell peppers, and crunched-up tortilla chips. It's a staple that goes on the meal plan every week because I know they'll eat it and I can sub things in to make it healthier! You can also use the same general idea for tacos or burritos, and since there's only one thing that needs to be cooked, it's done in under 10 minutes. I get you on the freedom of leaving an abusive situation - I've been there. It's amazing when you have the chance to do things you want to do, instead of things you have to do. And you are doing amazing things!
I do freezer meals. Sometimes if making lasagna or a casserole, make 2. Cook one for dinner that night and freeze the other one for a busy day or just don't feel like cooking. There are many different recipes online.

Meal planning - I just cleaned out my freezer and listed, on sticky notes, everything in my freezer. If I have a 'kit' or ingredient on the pantry shelf, I'll list it on the sticky note too. And then I put them on the front of the freezer. This way I can grab a sticky note and fix a meal. I know what's there and don't have to hunt and think about it. If you want to plan by the week, you can pick 7 sticky notes to put on your sheet for meal planning. Then you know instantly what you have available and what little extra things you need. Also, having been a single mom myself, ask your kids what 'special' meal they want during the month. Then fix their meal during the month.

Prepping meals - if you are buying ground beef, you can prep it for hamburgers or meatballs or meatloaf or spaghetti before freezing. Just buy enough to cover all the meals or prep for just one. Also, your chicken can be preseasoned and frozen, saving time when you unthaw to either bake, fry or crockpot. If you boil eggs, that's something you can do ahead of time and once cool, refrigerate. I used to cook extra veggies to give my sons when they came home so they would eat healthy until dinner was made. Always keep some type of fruit handy and switch it bn up each week. You are doing a FANTASTIC job and I commend you on your progress. Look in your are or where you are moving to see if there is a location called Community Bible Study. They are a group of women that meets weekly during the school year and they choose a book of the bible to study. They also bring their kids that are home schooled to go to age appropriate classes. It's only 2 hours but the break might be what you need. You'll meet and make a lot of new friends. Have fun this year!
Good video. Prob already commented but I didn’t read all the comments so ignore if this is a duplicate. Freezer meals can be a big time & budget saver. When I make a crock or instant pot meal I make a duplicate but dump it in a freezer bag instead cooking it, I have the dinner I am putting in the pot but now also one to toss in the freezer. Some people do big meal prep batches but my budget doesn’t allow for lots of extra supplies like that. Also sheet pan meals are good. Another thing is I might double cook up something like shredded chicken so I can have that extra portion to freeze or put into a freezer bag & ready for next time.

Jordan, just when I thought I could not enjoy your content anymore! I love this idea....creating one as soon as I can. This could be a product you design and sell. Maybe every "tool" you are using along your financial journey could be a tool that you sell. The possibilities are endless. It would be an amazing resource for you subscribers. Some youtubers I watch also sell products related to their channels or have affiliate links (like to Amazon) so when someone buys something thru your our link you get a small commission.
Hi Jordan, I like this idea. I never worked on a vision board before because It's so large-index cards make more sense for my situation. Can you do a "check-in" with your goals instead of waiting til the end of the year? See if you are meeting them or need to adjust any of them. Love your channel!!
Maybe I should do this before I really die into the cash stuffing. Lol. As far as meal planning goes. My husband usually cooks all our meals for the week on a Sunday then all we need to do is hest them up with my sons busy schedule it's perfect. We use the instapot alot and now an air fryer. You could also try hello fresh I myself have not used them however I know some people who do. I also see alot of UA-cams doing a thing with them.
