Pickled green strawberries

Green strawberries 🍓
Simply unripened strawberries. They’re firm and tart with a berry flavor at the end.
With the nice tart profile they can go sweet or savory cutting though fatty things like pork, or turn it into a sorbet.
Pickling liquid:
3/4 c Chardonnay vinegar
3/4 c apple cider vinegar
1 1/2 c water
1 tbsp salt
3 tbsp sugar
You can add spices like coriander or mustard seed I leave it without so it’s more neutral giving me wiggle room with seasonings later.
Directions:
Add all ingredients to a pot and bring to a boil making sure everything is dissolved. Cool completely
Pack green strawberries into a clean jar and pour the cool brine over the top and submerge completely. Let sit in the fridge for 48hrs
