    Beer battered are good, too. Equal parts the beer of your choice and flour. Dust the onions w/cornstarch before coating w/batter, dries the onions so the batter sticks.

    Karen, I learned from my mom to soak my cut onions in ice water to reduce that strong taste. It has always worked. And if you put a slice of onion on your head, you won't cry!!

      Hey Joan, if you rinse your onion after you cut the root end off, you won't cry either. It's the "milk" that seeps out of the root that makes you cry. : ) Guaranteed!

      Chef Jacques Pépin taught me that! He also said to rinse onions when they're gonna sit for a bit in the fridge or on a buffet table, keeps that awful sulfur smell away😁

    My late husband would have said "where are your onion rings?" LOL. That was his favorite. Your salad looked picture book perfect and was enjoyed by both of you I am sure. Have a Blessed day.

    I bet many folk do not realize how much knowledge you use everyday in cooking and baking---things you don't even think about! And yes, I do love olives! Makes you a great person to love them. My mother used to make a salad with peanuts and small bits of ham--it was a full dinner.

    Good evening to you Karen I certainly enjoy watching a good old Southern cook and you are one of them, my husband and I are retired and we sometimes have suppers like you and your husband do we might have a salad and some chips or onion rings or something of that nature and just enjoy it, I really enjoy the way that you describe your recipe and how you present it to your audience and the end result always looks delicious and you look so happy with what you have prepared and I know that you and your husband enjoy it. Keep that good old Southern cooking going and I’ll join with you because I am a home cook and I enjoy watching other women who are home cooks!!God bless you Karen and I look forward to seeing another video

    Soaking the onions also helps that thin sheeting on the inside of the ring to come off. That's the part that prevents it
    from hanging on and landing on your chin. It makes for a clean bite.

    I absolutely l o v e Onion Rings.. .. with fresh made Ranch Dressing. Those look delish, as does the Salad ! I always place them in a bowl of ice water for just a few minutes. . My husband was a Chef, he taught me that. ( I also do this with red onion if you're going to use it in a recipe because it takes a little bit of the " bite " out and it's not so strong)... I place my onion in the freezer for just a minute or two, before preparing... no tears . 🙂😊

    I like onion rings just the way you cooked them. I keep onions in the refrigerator. I haven't shed a tear over an onion in many years. Room temperature onions will make you get the crying towel when cutting/chopping. As far as the ice water and onions...I don't know. I've never tried that.

    Oh my word Karen... Love you for sharing this. I am with a man of 9 years that loves ONION RINGS... TY.
    I'm looking for the best recipe for, "Chicken & Dumplings"...Not the biscuit drop style.. the old dough noodle style. - My family taught me... (Dumplings) 3 Cups Flour, 1/4 Cup Lard... Make the Flour look like baby pebbles, using a fork or pastry cutter. Add small amounts of milk to form "rolling dough."
    (Roll with floured surface, "1/4 thick) Cut rustic, drop into low boil Broth... One by one... etc. CAN YOU SHOW A CLOSE METHOD AS SUCH? GOD BLESS MY FRIEND!!!

      Thank yiu Charli. I do have a chicken and dumplings video using frozen dumplings. We like flat ones. If you don't want or can't find them, make your biscuit dough really thick, roll out thin, cut out and drop in your broth.

      You are so sweet. If you can't get Vidalias just use a yellow and soak in ice water for a few minutes. That's a new trick I'm learning. It's supposed to take some of the harshness out of the onion. Loves to you and baby girl. ❤️ ❤️

    Oh my gosh! You’ve got quite a meal there! Yum Yum!!! We love onion rings. I don’t make them very often because I try to keep the fried food to a minimum. My hubby would eat everything fried if I would make it. Lol! If you dampen a paper towel and fold it long ways then place it right in front of your cutting board close to you it will keep your eyes from burning and tearing. Try it and let us know if it works for you. Thanks Karen

    Great looking supper! Makes me hungry. Have you ever fried together all sliced, yellow squash, red potaties and onion, dipped in flour mixture. Fry all at once. It's mouth watering yall. Glad to see you back and feeling much better.

    Luv, luv, luv everything you did. You are truly after my own heart Karen....lol. Yes, I have heard of soaking onions....never tried it though. That inspires me to put together a salad for this evenings meal.
