    A hungry man will try and eat it before it’s done. He’ll barely chew it, swallow it down while shoveling more in. He’ll eat till his belly swells and then eat some more. A starving man will be patient and let it cook till it’s done. He’ll chew every bite till it can’t be chewed no more. He won’t eat a lot at once and he’ll enjoy and savor every bite. What he don’t finish, he’ll put away for a later meal. A hungry man will fight his friends for the last morsel. A starving man will share the last morsel with friends. Been both 🙂

    That story reminded me of a time a few years back when I was cooking some chicken up for my girlfriends at the time. Them two ladies and I use that word loosely kept asking me is it done yet, is it done yet. They were both spoiled city girls and had never had chicken cooked over an open fire and just couldn't comprehend why it was taking so long to cook that chicken. Eventually they started telling me it had to be done that they could tell just by looking at it. I told them it wasn't close to being done yet and that I was cooking it slow so it would absorb that hickory smoke and it would be worth the wait. They just wouldn't give up and couldn't except that I knew what I was doing. I'm not the kinda guy that takes kindly to being criticised especially buy a couple of pampered city girls. So after a little more of their badgering my frustration with them turned into irritation and I threw that half raw chicken on a big old platter and said let's eat. I sat back so I could observe their pretty little faces when they bit into that half raw chicken and to be honest it was worth every bit of irritation they had inspired within me. They both took a big bite about the same time and pretty much had the same reaction. They spit that raw chicken out on their plates and sat there with dumbfounded looks upon their faces. Which turned to shock at seeing me take a big bite and continue eating a drumstick and a couple breasts of that cool pink meat with the blood still running out of it. All the while they were going on about how I was going to get sick and could possibly even die from eating raw chicken. I just smiled and told them it would be all their fault if I did. LOL
    Now I'm not saying it's a good idea to eat half cooked chicken but I can honestly say it was some of the best chicken I've ever eaten. It was definitely better than the cold cereal they had for supper that summer night all those years ago.
    It all turned out in the end. I had some of the best chicken I've ever eaten and didn't get sick or die obviously. They both learned that us country boys from the hills actually know a thing or two about cooking over a fire. And hopefully learned the value of being patient and that well cooked chicken over a fire probably tastes a little better than cold store bought cereal. 🤔

    Osborne Russell and his companions were a lot younger than these two nice fellas in the 1830's. Most Mountaineers in the heyday of the era, 1820 to 1840 were men in their 20's and early to middle 30's. These men are also not dressed exactly like the mountaineers of the era either. In fact authentic clothing might look a little bit boring compared to these guys. Fortunately we have the artwork of Alfred J Miller who was in the employ of a Scottish nobleman/ adventurer named William D Stewart. Miller recorded the trip in paintings. His artwork is widely available on the internet and is the closest evidence of how the mountaineers looked in the 1830s.
