In Ireland we make a Christmas Cake , layer of marzipan and then icing layer which we peak on top with a knife while soft . After the cake ages ofcourse like yours . Then also We put little figurines on top when the icing is soft ❤ would be fun to see you try it😊this was fun! And yes we also soak the fruit in cognac sometimes cream sherry
I love fruitcake! My mom was English and made it every Christmas. She made hers in an angel food cake pan and then wrapped it in cheesecloth and put it in a large tin. Then she would pour Mogan David (at least that’s what I remember) wine over it every few days. It was amazing. Thank you so much for the memory! ❤

I am using 2 retinoid products because I am gradually moving up in stregnth and switching from retinol to retinal. I worked up to daily, low strength retinol. Now i am substituting a higher strength retinal a couple of times per week, goal being to transition gradually to daily, higher retinal. Working great so far. I will probably always have the lower strength retinol to use on my sensitive neck. ALSO! I LOVE YOUR KITCHEN!!

This was a great video. Good humor while baking.😊. My Mom used to always make fruitcakes. She would store in a coat closet as very dark and every week would give them a good shot of alcohol. Wow did that closet smell. She would do this for at least a month before Christmas. Happy Holidays!
In the Caribbean we soak our fruit, raisins, dried orange peel, apricots, cherries in port wine from the day after Christmas until the day before, topping it up and stirring every week or so and storing in a food safe sealed container. So our fruit cake or rum cake is very potent and then it is brushed with citrus flavored liquor (Amaretto) and more port! It makes for a festive holiday served with a scoop of vanilla ice cream! My husband bakes by weight but he is an engineer so there is that.

Since you used almonds in your fruit cake you could substitute cognac for amaretto. I make white fruit cake because no one likes the dark one and I use amaretto. ❤

I have made Christmas fruit cake for years topped with real almond icing and white frosting. I usually soak the fruit overnight in spirits. The good thing about this type of cake is the keeping quality so if you have an unexpected guest it’s on standby. It is quite rich so you only need a small slice.

You need to dust the fruit lightly in flour before adding to batter. It helps suspend them in the “cake” rather than sinking to the bottom.
