1. Cognac is actually defined as a brandy produced in the French style of twice distillation white grape wine, distilled in the designated Cognac region from grapes which were grown from same said Gognac growing regions.
2. The Grading System is as follows:
According to the “Bureau National Interprofessionnel du Cognac” (BNIC) and Official French Regulations of AOP (Appellation d'Origine Protégée) Cognac:
*VS* “Very Special” *** (Three Stars) where the youngest brandy in the blend must have been matured in Limousin oak casks for at least 2 years old.
*VSOP* “Very Superior Old Pale” ***** (Five Stars) where the youngest brandy in the blend must have been matured in oak casks for at least 4 years old.
*Napoleon/Très Vieux* (From 2018). This grade must have matured for at least six years. (This used to be the definition of XO prior to 2018).
*XO* “Extra Old” which used to be known as “Napoleon”. There is a lot of confusion here due to a change in the regulations. The youngest brandy in the blend (up until 2018), had to be at least 6 years old. From 2018, the regulations for French Brandy was raised to at least 10 years of maturation in the cask.
*Hors d'âge* "beyond age" is a term used for the very top premium Cognac expressions. Officially the age has to be at least that of XO (10 Years), but in practice it can be a lot older. Having said this, there are XO brandies on the market which are 30 years or more, yet the term Hors d'âge is not used.
*XXO* From 2019. “Extra-Extra Old” where the maturation is at least 14 Years.
By the way, you may have wondered, especially considering the usual obsessive insistence of using only the French language for its products and services, the French Brandy grades are in English! This is historical as the British controlled the international Brandy trade within the 18th century and they established these now universally adopted grades.
Se
vs= at lest 2 years
vsop= at least 4
xo= 6-20 years
This guy is giving wrong info
@@mrcat3493 do you know what is the right info?
Aspen S. XO now has to have eau de vie aged at least 10 years. BNIC changed the rules a couple of years back.
@@mrcat3493
Any way to know if you are buying a bottle from before the rule change?
See my comment further up.
I poured a glass that way for a girl she was amazed lol
Did you tap that?
José Angel Esparza she thought that you knew what you were doing not just drinking drinking
Having married into a family of liquor/spirits lovers, and growing up in a dry Baptist household, I have found your video insightful and ultimately helpful. Thank you.
I love how you know your spirits. 😊💖
Thank you - perfect amount of information. I am making a shrimp scampi recipe that calls for adding brandy and white wine to the pan and igniting. Having only a bottle of VSOP Courvoisier, I wasn't sure if this was actually a "brandy". Not only did your informative video explain this for me, but now I know my scampi will be "very superior" and "special" :)
"That's living" haha fantastic
Terrific tutorial! Thanks for posting!
This is an excellent program. Well presented and very informative. You did not put irritating music in the background and thanks for that. Real classy.
Thanks! It's my birthday, and my father gave me a bottle of brandy. I'm going to enjoy it tonight
That was a Great Presentation. God bless you.

Thanks for the video. I've been working at a liquor retailer for a year and just wanted wanted to get some insight on the products I am selling. Very informative.
Very good video! I like this! Keep making more! Thanks!
What an informative guy. Very knowledgeable
Excellent vid! Thanks for sharing
By law regarding cognac and protected.
VS - minimum 2.5 years in wood
VSOP - minimum 4.5 years in wood
XO - minimum of 6.5 years in wood
XXO don't officially exist.
nobody will brand VSOP as VS. Than even more no body will brand XO as VSOP.
Therefore whenever buying VSOP and VS you may be sure of it's age. With XO it's difficult because all producers will claim it's so much more older...
Well sure brandy is unregulated everywhere I'm sure there are some well made ones regardless. It's also customary in france for XO to actually be like 10 years old minimum with blend ranging up to 30 years old. So their own rules are actually hurting them in france hence they change XO to 10 year to match reality. Although with vs, vsop you can bet that 60-80% of a blend going into bottle being at that minimum age.mysticresistence
What a great, though explanation, thank you.
Great video! I appreciate you sharing
That was really awesome thanks!!

Nicely done. It's refreshing to see that there is still a sense of tradition and style somewhere in society. Maybe it's making a comeback.

Great video, thanks
This guy knows what the hell he is talking about.
Its for sniffing? He must be stoned, men
It's his job. He's a bartender. What you expect.
Except VSOP usually stands for Very *Superior* Old Pale, not 'special'.
I'd like to see a 10year old vsop or 5 year vs

Very nice good Sir....
Great vid;) Love the stogy in the brandy comment;) "that's living"...Sure is;)
Ash pls tell me why u would do that lmfao
English gentleman it’s called the marriage, when you drink and smoke all that flavour is already in your mouth, so without even noticing it you are blending and flours of the two. To tip the mouth of the cigar slightly into your cognac infuses the cigar combining the two flavours so when you smoke the cigar you have also the taste of the cognac at the same time and it’s a great flavour when you know how the two works. Sometimes you would also take a puff of the cigar and put the smoke into the glass and mix the cigar smoke with the cognac dither infusing the flavour of the cognac. Now for those who don’t know much about the pairing of cigar and cognac or scotch etc wouldn’t understand what this is all about and why this is done. Me personally I do it all time and it complements each other with that marriage of the two. But not everyone does it and others prefer not to do it or they are not aware of it. A fine cigar mix with fine cognac or scotch when combined is a wonderful experience.
Love it!
you are right!!! that IS LIVING !! GOOD VID !! ;) CHEERS
drinking brandy in a snifter while watching this :)
When ya got style...flaunt it... that's what I say... Now excuse me..after breakfast I'm driving to the Chateau Elan winery in N. Ga.

Too fancy for me. I always end up binge drinking
I drank an entire 5th of VSOP in 10 minutes and then threw up for hours!!!
In the army now. I’ll kill a bottle and be sad it’s all gone.
Thank you for lesson. St-Remy VSOP - 🥂.
Really enjoyed the video. Never knew the facts about how to pour into the snifter. What is your opinion about adding ice or 7UP to a glass?
Nice pour
Legends watching this ❤
how could you spill away that brandy. Invite some friends and share. Even local hobo wouldn't mind to lie down behind your bar counter.
You don't need to swirl the glass to transfer heat to the liquor. You just have to hold it. Swirling only accelerates the evaporation of the alcohol.
Thank you for a brief 'History' of Brandy''s & Cognac. And I appreciate the explaination of the 'lettering' system on the bottle. I leared much from you.
"That's living" great presentation!
what a trip!

Like EnModeREC said, Grand Marnier is not exactly cognac, but instead cognac blended with essence of orange.
What have you tasted from the Grand Marnier line? If you've only tried Cordon Rouge, I recommend that you try Grand Marnier Louis-Alexandre.
i have this candle holder that u set the brandy snifter in over the candle fire! How hot or warm shold it be thanks
I've heard VSOP referred to as "Very SUPERIOR Old Pale". Is this wrong or is one more correct? Great video, one of my goals for 2013 is to learn more about Cognacs etc.
@jreily88 generaly speaking it's genuine wine + whisky blend of scents
Bartending like a sir..
2:53 I actually flinched like I was in pain.
I don't mean to correct you, but I've learned differently regarding the classifications of the aging.
VS - Very Special - Minimum two years of aging in an oak barrel.
VSOP - Very Special Old Pale - Minimum four years of aging in an oak barrel.
XO - Extra Old (or Napoleon) - Minimum six years of aging in an oak barrel.
Again; I do not mean to claim you wrong, but I want your experience on the topic.
The video was very informative and educational - Thank you for that!
Great to see Kevin Nash keeping busy
Hey there, I am a big fan of the Grand Marnier cognac, can someone please recommend me something similar to that type of cognac??
correct
infinit meme. best video.
I would KILL to know your professional take on using these newer brandy tulip type glasses instead....(for a Christmas present!) HELP
My fav cognac is cavoursier champagne cognac. Recently finished a 30th bday pressent of remi martin xo premier cru and the cavoursier was better imo and £100 cheaper
Yummy! I like Martell VSOP
Men of knowledge
which side of the cigar do you dip in your brandy? wouldn't dipping the lit side light it on fire?
