The facial expressions and behavior for most are based on how the writer saw drunks behave at bars.
Eren's (RIP) death is one of the reason this series is so beloved. It's not that people don't like Eren - but they appreciate how his getting eaten shows how *nobody* is safe in this series. There Is No Plot Armor.
Imagine how much fun they had putting Eren in all the promotional materials as if he was the main character only to have him killed off in the fifth episode. Brilliant.

Idk if it's the problem is the dub or you just cut Eren's speech after he faced off the colossal titan. But in the translation, I remember he said something along these lines "just like five years ago, the colossal titan appeared out of nowhere and disappeared the same way".. Which would answer your question about why they didn't see or hear him coming from miles away.
