It's super important that you use mild cheddar. Anything more tangy will be overwhelming. The biggest difference is the fluffiness of the cheese, though. While it looks like it's mounded high, when it melts, it's a pretty thin layer. It's just fluffed to high hell and graded in really long, thin strands.

A couple of things: I'm not from Cincinnati, but when they say "cut" they mean with the side of your fork, not a knife. It's sort of a "cut and scoop" method, and believe it or not it works. The other thing is that canned chili looks pretty thin, and although Cincinnati chili is thinner than Texas chili, it should still be a bit thicker. But it looks like this stuff will do in a pinch!

Prepping the cheese just right really makes a big difference in the overall taste and texture of this dish.
The amount of cheese you put on *looks* about right, but by looking at how it was grated and how it was stuck together I'd guess you used 1.5x - 2x of the amount they use in the restaurants.
The trick is to take a cold block of cheddar (mild or medium, cant remember which) and grate it into long, thin-ish strands that piles up on itself nicely. That way you can put a nice pile of cheese on top that doesn't melt immediately, and isn't overkill. You want to keep it cold once you get it ready so that it doesn't stick together.
You might not be able to tell from photos but Cincinnati style chili calls for a much fluffier, lighter cheese which gives the appearance of being over-cheesed but it's usually right on the money. Gotta be careful with that cheese stuff though, it's addicting when it's fluffed

Uhh I've never seen anyone eat oyster crackers with hot sauce haha. They just both go on the chili together. Also too many people hate on cincy chili without even trying it, and all they see is the canned version. And let me tell you the canned version is CRAP compared to the restaurant hahaha

If by "2 servings" Skyline meant "dinner" and "seconds"... sure. I'm a little alarmed to know that I've been eating nearly 100% of my daily recommended sodium, but I'd eat Skyline no matter what. And not living in the Tri-State anymore, I make do with the seasoning packets my folks sent me. Thanks so much for these Cincinnati Chili reviews. It's so good to see a little bit of home :)
Yes, the Cincinnati chili seasoning packets are a Godsend and can be found at Kroger. At least the ones I've been to in Ohio.

You know,there is another way heating canned food without needing to clean up after.You take a pan with boiling water,put the can inside un opened and boil it for 5-10 minutes (depends from soup to something that has starch in the product)with the lid on the pot.Then remove the pan from the heat,grab the can with a glove,shake it for 5 seconds,open the can a bit and let it rest for a while,untill the excessive steam leaves the can.Then open it and enjoy.But be carefull cause some products,especially creamy and starchy foods can boost out of the can and make a mess.I love your videos.Keep up the good work.

I am not from Cincinnati but I did live there for four years and grew to love Skyline. One thing to do is to make "hot sauce bombs." Take an oyster cracker and poke a hole in the top using your fork to expose the hollow interior. Then, slowly drip the hot sauce on the hole and let the hot sauce fill the interior of the cracker. Finally, toss that into your pie hole! Delicious!

the hot sauce at the restaurants is vinegar based like Tabasco. also the cheese is mild and fine so a lot of the mound of cheese is air. cutting is done with the fork usually. it tastes better than it looks. 4way is my favorite.
Excellent video Larry, I've had both in the can and prefer Gold Star, it seemed like it had more beef to me. The Gold Star cans are to expensive to ship so I just order the seasoning packets and make it myself. I'm a big fan of Cincinnati style chili.

having moved to Cincinnati from the southwest a couple years ago I was a little thrown off at the way the chili tastes (I was used to Texas Chili or Wienershnitzel Chili). But now its grown on me a bit - my favorite is the burrito Goldstar makes with fritos, chili and cheese, its pretty dang good

Larry, I have to say that you did your research. When I was a small child in 1964 and 1965, my parents would take us to a small storefront restaurant in Cincinnati called Hamburger Heaven. The five of us would eat for about $6 total. We were really upset when the place closed was torn down when they built the first Gold Star Chili. To this day, I can still visualize the old Hamburger Heaven in its cramped quarter. Thanks for the mempries!
Here in the mid-west, we just have a mix. We have beans and meat with your mix of veggies that you want to put in- (Which is optional) Some nice spices that would be more northern, and Oyster Crackers or Fritos. We put both on top. The only time cheese is with any chili, is on a chili dog.

Skyline makes their 5 ways this way- spaghetti, beans, chili, onions, and cheese. It does make a difference how it's layered.
You are a brave man....I would never eat Cincinnati chili if I can help it.
The chili itself is pretty much identical everywhere, even at Empress (I live in KY). The reason most people like Skyline better us because they put more cheese on everything and are more consistent. At Gold Star a lot of times they put too much mustard on the coneys, or not enough chili, or too much chili, etc. Skyline is perfect every time. Also if you wanna make it at home you HAVE to grate your own cheese...that shredded cheese in the bag has potato starch on it to keep it from sticking and makes it taste kinda crappy. There's a spice pack you can get that you mix with water and tomato paste that is way better than the canned stuff. Also try making the dip; you spread a 8pz block of cream cheese on the bottom of a glass baking dish, cover that with a can of chili, then cover that with 2 cups of shredded cheese and bake it for about 10 mins till the cheese melts and eat it with tortilla chips
My brother in law lives in KY and one time he passed a skyline, went over the bridge away from the skyline, and stopped at a gold star asking if I was hungry. I was 10, but I would not eat gold star. He said you really want me to go 15 minutes back for skyline? I said the most confident yes I think I've ever said. The difference is real.

i used to eat at the skyline in ft lauderdale florida and it was really good especially after a few beers. I liked the chili dogs the best, but the spaghetti was good also. need to try some goldstar now. thanks for the video!
I was tickled to see a comparison on Skyline and Gold Star. Personally, having lived in Cincinnati for my entire life, I love my Cincinnati-style chili. (Empress is my favorite, from the freezer section of the local grocery.) However, that was a lot of cheese. I love my cheese, but feel free to use less next time. Or even try the recipe for Skyline Chili Dip. Won't be judging how you like your Cincinnati-style chili. Everyone does it their way.
Side joke: Only in Cincinnati is a five-way something to share with the family. ;-)
Was in Dayton for the Hamfest...and across the street from my hotel? Skyline Chili... The amount of cheese used was astronomical.... was rather tastey... and served amazingly quickly...

2. Skyline Chili
3. Gold Star Chili
4. My own homemade
5. Empress Chili
6. Worthington’s (canned from Gordon Food Service, but I alter it to taste)
7. Dixie Chili
8. Generic (canned Kroger/Walmart brand).
Camp Washington is most locals' favorite! Whenever I go anywhere with "classic signature" food I always ask the locals working at grocery store, convenience store, beer barn, etc. (normal folks usually over the age of 40) where to go for NON touristy grub. Camp Washington was the choice of 2 out of three and Gold Star was a DO NOT eat that crap of nearly all.

I have been to the skyline chili down here in Florida and the cheese they use is very mild and super thin, they add a bunch on top and it's not overwhelming like the cheddar we find in the local grocery stores, that's why you found it took away from the other flavors, I make it at home and if you can't get their cheese it's not the same... close but not the same
Born in raised in Cincinnati, and eating both all of my life, I think they are equally matched. Skyline has been around the longest and has more fan follow. I prefer Goldstars chili recipe, and Skylines paper thin shredded cheese. But let's not forget Pleasant Ridge chili.
The best advice I got from Larry is, if you're going for a threeway might as well go all the way and go for a fiveway.
Both of these are great - Steak&Shake is not a horrid substitute if you lack the others, but nothing really matches Cincinnati-style chili on pasta!

Coming from an Italian family, my first thought is: Spaghetti for people who don't like spaghetti.
And living in Texas, chili should stand on its own, not be a watery sauce. Blasphemy all around.
The shredded cheese in this video looks more densely packed than it is when they serve it at the restaurant, so I think he has a lot more cheese than he should. Too much for it all to even melt. Also, they use a mild cheddar. I prefer a sharp cheddar on pretty much everything else, but if you put sharp on Cincinnati chili it will overpower the flavor of everything else.

5 way is the way to go...but it looks like you put just a *little* too much cheese. Or perhaps, your cheese is denser than Skyline's cheese. They do have a particularly light and airy cheese that is hard to find elsewhere.

I used to eat Skyline in Indianapolis at least once a week, and never seen that much cheese used. I wouldn't like that, however...the best thing on the menu is the burrito, absolutely amazing. Hot sauce does make a difference and is a must for me......

Hey I just had some "truckers beans" today. I said wow! I need to get more of that "chili"! I thought it was chili until someone corrected me. It's truckers beans. It was sweet and more beans than chili. Very good!!

Ray, I'm not from Cincinnati but if I can make a suggestion-melt the cheese in the microwave after you add it but before you eat it. For a really good bowl of chili 5-ways if you are in the Midwest look for a Steak n Shake diner. If you want to try a canned chili that is authentic Mexican chili get a can of Taylor's Gourmet chili. The chili parlor has been open in Carlinville, Illinois since 1904 and they have a web-site where you can order their chili and bean soup by mail in individual cans or by 6, 12,and 24 can cases. It's a bit pricey at $5.00 a can but it is so much better than regular store-bought chili that you will notice the difference right away.
Don't be shocked when you open the large can only to find a can of beans. The secret is in the small can. Drain the bean juice,empty the small can into a bowl, then cover with the beans and put in the microwave for 1min 30 sec. take out and stir. Put back in the micro for 30 sec to 1 minute. It is traditionally eaten with a spritz of cider vinegar which really adds to the flavor, and saltines on the side.
There is also a bean soup which is one of my favorites. I usually order two large bowls when I eat there. They used to make it ready to cook and eat but now you get the beans which you have to soak and the sauce comes in a tin. The canned version is not as good as the restaurant in my opinion but still it is good. The beans are large Butter beans which look like limas only much larger. The soup has a tomato base and the beans break down somewhat to make the soup more like a thin porridge.
The main thing about Cincinnati chilli isn't cinnamon or the cocoa powder, in fact you wouldn't even notice a difference if it's left out. It's become more of a gimmick than anything. it's the massive quantity of onion powder in the stuff and on top of that you put fresh onion on it after being served. That's the real secret
Its harder to make from scratch than people think.. cinnamon, allspice, chili powder, white vinegar, garlic, bay leaves, salt, peeper, onions, peeled tomatos.. also you gotta shred the cheese much finer than that
As a Virginian, id never heard of Cincinnati chili...but i donout cinnamon in my chili and people are usually pleasantly suprised by it.

This episode led to many watched videos and read articles about this foodomenon. Now I'm a pro except I haven't actually tried it hahaha. It looks amazing but have never seen it in Canada and am very basic in the kitchen.
You gotta make it to cincy to actually go to the restaurants, and be sure to go to blue ash chili if you ever make it here. They offer a 6 way that has fried jalapeno bottle caps on it. It's pretty tasty stuff.
6 way is a gimmick.

Yeah he went overboard on the shredded cheese. The big difference in it is that the cheese which must be a mild cheddar is best when it at 15 degrees below room temperature when it is shredded by hand. Do not use a bag of pre shredded cheese as there is cellouse in it to keep it from clumping and changes the flavor profile. After you finely shred it, put it back in the fridge and prepare the spaghetti noodles. When you do boil the noodles, prep the water with a pinch of salt 1/4 teaspoon of dry mustard powder and four shakes or grinds of black pepper. This may not seem like alot, but it does make a difference. The choice of pasta is really your prerogative, but if you flavors to come out in a nice compliment to each other, I suggest either angel hair or vermicelli.
And to be completely honest, the canned version is not as good as it is fresh. Some of the best is in the little hole in the walls that I can recall from my youth. For instance, JK's chili in Madera.
When I was a teenager, my best friend and his family moved to Cincinnati, they were from Mississippi. I told them about the location and they invited me to come down to see them, they waited six months to try it... Well not all of them, his mother had gone out to Skyline and had experienced the chain restaurant version. To everyone's surprise, she exclaimed that JK's had so much more flavor!!!
Now I could tell ya the difference between the two of them... But I don't want to spoil it for you.

I did an oops once, and grabbed the cinnamon shaker thinking it was the paprika, dumped that in my big pot of chili. It wasn't that bad, a couple folks even liked it. If I had known it was a thing folks did on purpose I could have saved myself a ton of explaining.
