my family does occasionally add daikon to it because they like how much it absorbs the flavor (along with its own of course). but word of warning, if your batch lasts more than a few days via boiling (im sure freezing is fine? wouldnt know), then taste the daikon cause it might be too salty by the end, especially compared to a heartier and sweeter carrot

Thanks! It's readily available at my Vietnamese grocery store (Lam's), but any butcher should have the shank cut too.
I also live in Washington. What grocery store do you go for your Vietnamese ingredients?
Lam's in the ID is my go-to. Hau Hau across the street is also great!
