Ass to grass ain’t for everyone. Everyone is built different .you can still make gain as long as you have good form and know what muscle you focusing in. Ass to grass is more to target glutes at least for me 🤷🏾♂️

Barbell squats absolutely 100% do NOT need to be ass to grass. Your hip needs to come down to knee level making your thigh/femur run parallel to the floor and that is all that is necessary. If your hip comes any lower without perfect form, you risk all kinds of injury, namely lower back
That is not a smith machine. I do not know the technical term for it. Smith machines have weird rotating hooks and are fixed on one vertical track. The machine you are using can move both vertically and horizontally, my college gym had one.

It is less safe for your body to go ATG. Your glutes and quads will develop as good if your glutes are slightly above, parallel to the ground without unnecessary burden on knees.
I'm 5.8 basically a dwarf / hobbit. And i love doing squats i usually do paused squats and deep but i add later light weight smith machine squats again for focusing quads doing sissy squats

Greater knee flexion or in other words more depth will target more of your quads. Glutes don't need lots of depth they need wider stance.
Ass to the grass is not necessary as long quads are parallel to the floor.

6'4 here, been doing barbell squats for a while now, I can say this has relieved a lot of pain I use to have in my knees.
