    This one could have gone for three hours and I would have sat mesmerized - Kush is absolutely amazing at taking these recipes and making them so accessible. Ebbers is the same. It’s like the best kind of class you could ever attend. And I LOVED it when Kush got Jamie to come up and do the step he wasn’t sure about. Kush is just special - you almost…ALMOST forget what a fantastic troll he can be too!

      @@jacquesbacques8706 (Sorry, I'm not a Sorted chef) But yes you can spatchcock a turkey. Makes it much easier to cook quicker & more evenly. It can make large birds too wide/large to fit in a home oven though. You may want to cut it in half down the middle & cook it on two levels, swapping them about. With a bit of practice (practice on chickens - they're cheaper) you can totally bone a turkey in one piece. Then stuff it & it makes for easy roasting & simple carving at the table.

    Im a big fan of these more intimate videos where there's no challenge or anything, just a skilled chef like Kush going through the process being able to answer questions on the fly and showing tips. Lends to a very relaxing watch where you can absorb the information much easier!

      I think he is very alike with Ben in that regard as it feels very nice to listen to both of them explain and for normal homecooks it is very educational. There just seems to be more shenaniganery occuring around Ben.

    The way Kush educates while cooking is amazing. The way he pulled Jamie over to give a close up demonstration when he expressed his issue with making brown butter. Real dad vibes.

      That's how chefs work. As soon as a stage or commis expresses hesitation over a technique, the sous chef puts them in charge of that technique. A few supervised attempts, and they're off. I've worked in many high-end kitchens (I might have met Kush at Manoir, though my memory from those days is hazy), and the best ones always use that style of teaching. The worst chefs are the ones who gatekeep.

    Ebbers exhausted-face-into-silly-little-smile at 10:46 is EVERYTHING to me. Such a simple moment, that is so human and makes you know that at the end of the day, this is a channel run by actual friends.
    I hope you all know that that is why we keep coming back. Lots of people cook, and you guys doing it great and relatably, but speaking for myself, I come back for the "friend moments".
    Oh, and hey editor: nice cut at 19:38 when Kush said "keep rubbing those off" and the cut to the two boys coming out of a laughing fit and acting serious. Amazing.

    Watching Kush cook is an absolute joy. He is so calm with explaining everything and why he's doing it, showing you in-depth what's going on. Maybe you guys should think about making a new cookbook or app that highlights more indulgent dishes, things that would make people say "Wow!"

      If you have a look around UA-cam there's a couple of videos with Kush from his time at Raymond Blanc & at least one of Monsieur Blanc cooking one of Kush's dishes. A vegetable curry IIRC. Chef Blanc seemed to really like Kush & has high hopes for him.

      I know what you mean, but this channel has more influence and has more reach than any traditional tv outlet for which I'm aware. This is astonishing content, truly. I'm reminded of watching Julia Child in my childhood. There's something about her that was magical, like watching a wizard master create something amazing. This channel, especially with Kush and Ebbers, frequently matches that level of magic for me. This video is definitely at the top.

    Kush is such a breath of fresh air on the channel. I love how he sees simple moments such as the beurre noisette as a teachable moment to build Jamie's skill set and confidence. Something that's been missing since James left.

    Hands down one of the best videos you’ve done in ages. Kush is great on camera, and it’s bare (luxury) bones cooking which is why we all followed you all those years ago!! The review videos etc are fun but the best videos are ALWAYS the ones where you guys are cooking! Please more of Kush’s peaceful, controlled cooking! Love it ❤

    I love how much Jamie is just loving this. He just seems to be having the best time. And I don't blame him. x3 I like this energy from Kush a lot too. This could be kind of a fun series, honestly. Kush just being in his element, getting to be a little extreme or over the top but also educational, but doing what he does best.

    Kush has been a great addition to the Sorted team! I love the fact that he is kind of a smartass, but you can tell that he really does enjoy cooking and helping people learn to become better cooks. I would have never of thought to do something like this, but I'm thinking I may give something like this a try now especially the way he did it at home with the boneless skinless chicken thighs.

    Kush unleashed!!! And I'm with you about turkey dude. I roast a picahna for my Xmas dinner cos I'm on my own, so it's a meal hot, the cold for a couple of days after. And it's cheaper than a bloody turkey. What a great teacher Kush is. When Jamie mentions having issues he gets him doing it while he guides him. Nothing teaches like experience.

    Seeing either Ebbers or Kush go wild is always a treat. I always remeber one of the old grocery bag challenges where Ben showed three great recipes and it was brilliant. Such a great resource having two chefs explain their method mind set throughout the process!

    Something about this video felt really special. I think you did a fantastic job putting this together because Kush is clearly a very good teacher. And having one student that knows everything that's happening, and one student that doesn't, both asking questions along the way to make sure that everyone can follow along is just fantastic.     Amazing video, absolutely loved this.
    I cook a lot and watch a lot of terestrial and online cooking content and have for my entire life. There were so many little things in this video that I had never seen talked about before. From a long time fan, please do more videos like this! I love James and its always great to see him back but having Kush be more present on the channel has been a game changer for me. His level of expertise offers something really unique that no other mainstream channels I watch provide.

    Always cooked a whole turkey, for over 35 years and never had any issues, never done what Kush has done, always cooked covered in tinfoil and removed the top of the foil around 45 minutes before it is finished cooking to baste and brown the skin.
    Maybe because doing what Kush did would be totally out of my comfort zone and skill.
    Please Sorted Food MORE Kush, he is incredible in his skills and knowledge, it is on another level.

    I did not know that about refreezing meat ... once you change the state it can be refrozen! Thanks for all the super advice, Kush, Ben, and Jamie!

    i love kush. the man contains multitudes. he's simultaneously chaotic/unpredictable and an incredibly thoughtful, even-keeled chef -- plus he seems to have a passion, or at least an aptitude, for teaching. i'm so impressed with the way he relates to the normals and explains things to them (and, by proxy, us). in this video specifically, i liked that he mentioned to jamie that the herbs would sputter when they went into the brown butter, because that is EXACTLY the kind of thing i don't have the intuition for when cooking. like, i'll figure out "right, herbs have water in them, water + hot fat = sputtering," but it'll take me a few seconds of absolute panic before my brain gets there.
    anyway, loving all the kush kontent (™) recently and i'm glad you guys have gotten him to spend more time in front of the camera! he's a delight.

    Firstly, thank you for the advent of videos! As a creator of a small channel, I know how much work goes into one video a week. The fact you've done nearly 24 in a row is phenomenal, regardless of the fact there's a team there, and it's been a joy to watch these!
    Secondly, Kush is so stupidly good at what he does. I'm sure he could walk into a job at any professional kitchen. But I'm very glad he's with Sorted and sharing his knowledge and skills with us! 💛

    Discovering sous vide cooking 15 years ago was a game changer for me and our usual dry Christmas turkey. My first version was an old bottling urn with a temperature controller connected and the results were fantastic. But Kush has definitely upped the game with his amazing prep so I will take it on board for next Christmas. Already ordered the meat glue. 🎄

    One of my favourite ever Kush videos. Please - more, more, more !!! I learn so much from watching him (and Ebbers, too !) but they are a joy to watch and so so good at teaching. As lots of people have said - the way he brought Jamie over for a little private lesson was just perfect. Honestly - more of these, please. Don't care at all what type of food/occasion - just want to see more !

    What a show! That was excellent. As much as I love watching the "Normals" on their journey, I like to see trained chefs; like Kush, Ben & James cooking with the gloves off. I've done a few ballantines over the years, but have relied on the proteins bonding naturally. Meat glue makes a difference. The last one was rabbit meat, stuffed with sweet Italian sausage & pistachios, wrapped in lightly smoked bacon. Was very nice.

      @@neilthehermit4655 It was really, really good. Like the turkey, rabbit can be dry. So the fat from the bacon & the sausage meat helps keep it juicy. I love the fennel & spicing of sweet Italian sausage & it compliments the mild gamey flavour of rabbit well. If you don't want to use a lot of plastic then most ballantine recipes can be easily turned into terrine ones. Though some see terrines as a little old fashioned now.

    I can't help but mirror the other comments I see here. I could literally watch this for hours. Kush speaking so knowledgably, broken up with commentary and chill music in the background. Please, please, please consider doing more of these in the future! I love the Sorted craziness of Pass It On and the fun games but Kush just brings a whole new 'cheffy' vibe to the set. Thank you for the daily videos this month!

    I'd love to see more of Kush in general. He's got such a soft confidence, where he truly knows what he's doing, but doesn't feel like he's showing off.

    What really amazes me is that I follow a lot of cooking channels, watch a lot of cooking shows, and read some cookbooks but as far as I can remember, I've never seen/read these steps/ideas that Kush mentioned. Makes you really think that his insight in cooking is so incredible. Superb!

    Oh Kush! I break my turkey down too but I’m not as cheffy as you. I braise and pull the dark meat, brine and roast the breast, make delicious turkey stock just as you do, and also killer gravy. Bread stuffing on the side. You certainly elevated my game!

    Kush is amazing,awesome, and i could watch him every day. I learned so much from watching this one video he's is an amazing teacher.     How is it that every chef you guys @ Sorted find/partner with are all epic! Somehow I think you have managed to save the best until now, Kush is like a combination of the best from Ebbers and James! Plus because I am less of a chef than even Jamie or Mike are... Kush somehow manages to explain things simple enough for someone as useless as myself to fully understand it!! Thanks all @Sorted Food!!

    It’s a vey good move of Sorted that they made Kush part of the team. He’s not only a very knowledgeable and good cook. But a good teacher and he has a natural camera presence.

    I love Kush's style, he is so calm and very imformative.I'm so glad you found a way to get him more on camera, crap news style but works here. I do not even like that food but now I can make it for my friends and they will be blown away as always when I use your recepies.
