2 Easy Protein Packed Random Recipes / Plant Based

- Today I will be sharing with you 2 easy protein packed random recipes that are so yummy. The first recipe was inspired by @broccoli_mum with a couple of modification and the second is a chocolate sweet treat. The full recipes are below.

RED LENTIL WAFFLE SANDWICH
1/2 cup red lentils soaked in boiling water for 1 hour
1 cup water
1/2 tsp garlic salt
1 tsp onion powder
1/4 cup nutritional yeast
1 tsp baking powder
1 tsp apple cider vinegar
1 tablespoon ground flax
1 scoop unflavored protein powder
1 tsp ground psyllium husks
Drain and rinse the red lentils then add everything into a high speed blender and blend till smooth.
Add half the batter to a preheated waffle iron and let cook for 8 to 10 minutes. If you do not have a good non stick waffle iron then spray with a bit of avocado oil.
For the sandwich filling.
2 Tablespoons hummus
sliced cucumber
sliced onion
sliced tomato
4-5 butter lettuce leaves
Cut waffle in half and spread the hummus on each half then add the rest of the veggies on to one of the halves then put them together and enjoy!
Recipe makes 2 waffles
Per waffle
350 calories
28g protein
6.7g fat
37 carbs
BROWNIE COOKIES
1 baked sweet potato
3 tablespoons Cacao powder
1/2 tsp vanilla bean powder
1 tsp baking powder
5 soaked dates in 1 cup warm water
2 scoops chocolate protein powder ( Discount code below)
6 tablespoons gluten free flour
5 tablespoons vegan chocolate chips ( I use enjoy life)
6 tablespoons PB2 reconstituted with water
Plant milk if needed
Add all the ingredients except the chocolate chips including the water you soaked the dates in, into a food processor and blend till smooth, if it is too dry then add plant milk 1 tablespoon at a time until a dough like consistency is reached. If it is too wet add more flour 1 Tablespoon. Let dough chill in fridge for at least 30 minutes. Bake in a preheated oven for 12 to 15 minutes. Let cook completely before serving.
Recipe makes 12 large cookies

5g protein
3.5g fat
14g carbs

I made Broccoli Mum's waffle recipe when she posted it on YT, personalized it & enjoyed it. As it turns out for dinner tonight I made some sweet potato waffles (mashed sweet potatoes with oat flour) stuffed with a wild rice burger, tzatziki with cucumber & arugula eaten with a large side of asparagus.

Random, I love Broccoli Mum too, I just made her chocolate cookie, but it was a little microwave stale feeling, if you know what I mean. I’m going to try your recipe too, but maybe experiment with swapping a few things too. I’m dying to try that waffle, but I don’t have a waffle iron yet!

You are so welcome! This is the waffle iron I use amzn.to/3VKKvPq I usually do not have any problem with sticking. You can also use a small amount of avocado spray oil.

Sure you can add more flour
Nobody hears needs protein only bodybuilders on steroids, need extra protein as you build one to 5 g of muscle per day at most if you are weight training correctly, focus on getting enough carbs to fuel your workouts to push really hard and recover well, Carbs FTW!! 💪💪💪
Agree to disagree. As a post menopausal women I am adding more protein to my meals. There is nothing wrong, with tofu and tempeh. Not just bodybuilders need adequate protein. To say that nobody needs protein is not only incorrect information but it is dangerous. I eat plenty of whole carbs, healthy fats and yes protein. I believe in balance.
