A wonderful tradition of Advent are the O Antiphons (there is a good wikipedia article on them for background), These are chanted/sung the last 7 days of the season at Vespers. But in your church you could incorporate them via the hymn Oh Come Oh Come Immanuel on the four Sundays of Advent. The hymn is essentially the O Antiphons. There are five verses in the hymn (rather than 7). You could sing verses 1-2 on the first Sunday, the 2-3 on the next, and 3-4 the next, and finally 4-5. Actually, I attended a Catholic Parish where we did just that.
