A lot of his sponge cake/chiffon cake recipes have a scary amount of sugar, which is kind of a bummer... Most sponge/chiffon cake will be decently sweet with about 100-150g of sugar in my opinion

Who else is still following the recipe? I did one yesterday on my 10 inch (25cm) mold, after the last attempt so many years ago. Turn out the cake raises well. Just need to get the right timing to bake so it is drier. (FYI I use a convection oven and need to moderate the sugar again to make it less sweet) Will continue to follow other his chiffon recipe.
My mum used to bake this cake growing up but since she was diagnosis with severe depression almost 7 years ago. And when we moved houses I couldn't find her recipe. With the upcoming October feast birthday celebration in the family this weekend. I want to make my mum proud.

Do you know what I liked most of this video.... No much utensils were dirty... Only 2 large bowl .... Add all ingredients in first and meringue in another.... That's it.... I also made sheets from the batter they turned out so Yummm.... Thanks for the recipe ....

Michael, i have successfully made this cake for the first time!!! Yay!! . Kids and in-law said it was a bit dry. I think I beat the egg white a bit too long. I would try it again tomorrow. In-law loved the vanilla sponge cake. Can you I use this receipt for making vanilla chiffon cake as well?

I made it today and it turned out perfect. Except that i added 1 teaspoon cream of tartar to the meringue mixture and 1 teaspoon of instant coffee to the cake mixture.

Hallo i have a question. I have a small oven and my cakes are burning on top can i use a lower temperature 160 degrees Celsius or put foil on top. 👍🏽

It is all depends on your folding skills. If there are lots of big air bubbles in the batter, it is best to tap the pan to remove the air bubbles.
