With apple trees giving you so many apples, maybe you should make some apple sauce. Not only good as a side dish with a pork roast and pork chops. The sauce can be used in making a beautiful apple sauce cake. Can up your apples for making cakes and pies. Delicious!

In canada your oven method is quietly passed around like an illegal secret among only real enthusiasts, except we do it dry and slowly turn the oven up until you hear a hiss on the pan, then turn it off. For the amount you do, it would be perfect to get a special pot where you can "cook" 12-18 glases at once and perfectly control the temperature. Search for "preserving cooker". And, maybe you did this step off video, you should always cook the empty glases before you fill them, to make sure they are disinfected. Otherwise you risk that the content will spoil much faster.
With so many apples have you considered making applesauce or maybe apple butter. Interesting how y’all make your pickles. I’ve never seen horseradish and garlic put in them. I see Deivid really likes his treat.

It's always so satisfying to look at a beautiful batch of preserved fruits and vegetables covering the counter! Just a little suggestion, here in the States, we make a point to leave a bit more space at the top of the jars, not filling them quite as full to tge top, and we take a clean wet cloth and very carefully wash the tops of each jar very well before putting on the lid. We rinse the cloth every few jars to make sure its very clean of lit bits of anything from inside the jars. That way there's a much better chance that all the jars will properly seal. I don't remember trying the pumpkin and fruit, but it does sound really delicious! Thanks for sharing that!

175 C, 30 Minutes from start of the water boiling in the pan = 30 min in boiling water, for safety let them cool down in the oven. You could place a wet towel on top of the lids to protect the lids from the direct heat.
Now I'm confused. Another youtube channel says not to add vinegar because it kills the good prebiotic. Maybe that's the difference between fermented and pickled. Cheers!
