One of the great things about grinding your own meat is that you can cook the burger as rare as you like with no fear of illness. That burger looked good!

Biggs' Home Cookin' I’ve had the 15” skillet since 2013. I also have a little CS omelette pan it’s not Lodge but it’s Old probably WWII era. Those are the only two pieces of CS cookware so far. I’ve used CI nearly exclusively for 2½ decades but I’m beginning to really appreciate CS. Only in the last year or so have I begun to use the 15” CS skillet for more than just paella or scrambled eggs for a crowd. I cooked in it last night as a matter of fact.
I like them cause there a bit lighter and I find them easier to clean than CI... now you still need that CI cause there ain't no CS skillets with lids or dutch ovens...
The burger was done just right. I'd likely doll it up a little different. Looks very tasty to me. You have a good seasoning on the carbon steel griddle. Cheers to you you.

Hey CB, now others are lookin, at Biggs Home Cookin. You had a sub jump and broke pass 400. The pot is beginning to boil. I love that grinder. Early 90's model is prolly made better than a newer one. That surely was a steak in a bun. Griddle is great, onions fantastic. Burger looked delicious. It cooked more than I thought in the middle. I thought it would be rare. Sounds like that sign off is working. Need a bit more passion grease on it. Keep juicin it up. Great video brother.

Hey Biggs, I used to read the meat temp while the item was on the grill or griddle like you do. Then a buddy was reading the instructions: he informed me that the meat must be removed from the heat source to get an accurate reading. No wonder I was coming up with under-cooked meat! Try quickly removing the piece with a spatula or tongs, test it, then decide what to do...
That Looked Filthy Good. A lot of Meat, Grease, Butter , And Onions, That’s a MEATASTIC Burger. I wouldn’t eat a whole lot of them though, That would clog my arteries quickly. Lol
MeatHead good for you. Well i can not remember the last time i had burboun - if ever really. I do drink a beer on occasion but prefer water when eating. Have found a nice non alcohol wine that i like too. I am not against drinking as such - just find it hinders my freedom of mobility :)
Hey Chris! Liked that crust you got on that burger. Good point to not have the griddle too hot, as to have it cook through. Putting the already caramelized onions into the hot fat was over the top! Great job! \m/

That burger is bad. Steak is okay to undercook the inside because dangerous bacteria can't penetrate the surface. When you grind the steak, you mix that bacteria into the inside of the burger. 120 degrees does not kill that bacteria. Ground beef is not steak. Ribeye steak, a fatty cut of meat. Onions just drenched in beef fat. A knob of butter on the burger. Just fat on top of fat on fat. Undercooked meat. Insanely fatty burger. No cheese. Untoasted bun. You destroyed that ribeye and screwed up what could have been a great burger.
Sorry Geo that the burger did not meat your requirements... but there are many burgers that are cooked this way all over the place. Thanks for watching the video.
I bought a 120 meat grinder on amazon and a $56 prime boneless ribeye from Costco. The flavor of it is unbelievable. Always grind your own meat!
