No joke. I'm a college student who learned how to make sweet potato gnocchi last month (before I saw this video). For a better consistency, use type 00 flour (I'm a big baker so I have it on hand). I make 4 pounds of the stuff at a time then freeze it all for many meals. It's one of my favorite meals to make with a browned butter sauce and sage. Sometimes I'll put costco rotisserie chicken with it.

Made this tonight and it's delicious oh my gosh!! New favourite recipe!! We pan fried some of the gnocchi and it kinda carmelized the bottom and really brought out the sweet potato flavors, which were pretty subtle when just boiled

The college recipe ideas always crack me up. It’s not the price. There are a million dishes that are 5$ or less a serving. Cooking at home for under 5$ a head isn’t difficult. The issue is less one of money than of surroundings and circumstances. Like how many college kids living dorms have access to ovens and burners and pots and pans and mixing bowls. I don’t know about you but when I lived in a dorm I didn’t have access to any of those things. I don’t even have a fork.
I mean if you have an oven and burners and pots and pans and mixing bowls and room for a chopping board and other prep and a fridge and cupboard full of staples like garlic cloves and lemons and olive oil... Your not exactly struggling to “get through,” college are you? Lol.
If you're in a dorm w no oven/stove: Simple baked potato (works w sweet potatoes too) Wash thoroughly, pat dry Wrap in saranwrap/plastic wrap Stab w a fork a few times Microwave for 5 mins; if not yet done, 30 sec increments until done Unwrap and serve!
I just microwave them. Naked in a bowl. You can add some water to the bowl if you wish, and/or cover it with another plate/bowl too. They taste sweeter when made in the oven though, so maybe get a toaster oven.
Pro tips: if your not a fan of sweet potato or can’t afford them, same steps can be followed with regular potatoes. This is a decent gnocchi recipe, but you can defs add salt, pepper and Parmesan (if you can) and it will be great. Try not to make it toooooo dense and flourly, basically enough flour to make a dough, but not too much that it just tastes like dough, you still want some potato taste and texture. Sauces, a super simple not-pesto is always a good option but one of the more popular gnocchi sauces is a burnt butter sage sauce. Basically it’s browned butter and fresh sage … it’s very easy. Depending on your location, most supermarkets will sell little packets of fresh herbs and you’re usually able to buy some sage (would recommend fresh over dried for a two ingredient sauce). You can also make another basic sauce with butter, garlic, parsley and gnocchi water, optional shredded chicken (this also works for pasta!!!) The reason butter sauces are soooo popular with gnocchi is because they are verrrrry dense and filling (being potatoes) so typically you want a light sauce But this is defs a beginner friendly and budget friendly dish, the worst part is the process making dough, rolling gnocchi etc. if you’re unsure of the process look up a YT video or five and you’ll get the hang of it As long as you get little potato blobs you’ll be right 😂

So, I just made this recipe today, and as a college student with my mom’s entire kitchen at disposal, I would not call this a low-effort or college friendly dish in the slightest. It took a few hours and many different kitchen utensils, bowls, and pans. However, I had good reviews from the family, and appreciate a healthy and few-ingredient dish to spice up the day, so thank you regardless.
We have our own version in Poland too and the main idea is to simply have something to do with leftover mashed potatoes. So you wouldn't make 'kopytka' (Polish equivalent) for kopytka, you would make them because you have a lot of leftover potatoes from yesterday's dinner. So day 1 - prepare more mashed potatoes, day 2 take leftovers, mix them with flour and egg and boil. And it basically cuts the preparation time in half, if you catch my drift. Cheers.

My question is how did you have the energy and time to do this while going through college? The cooking alone is exhausting and you're left with a lot of dishes just for one person 😅 anyway it does look good, if sweet potatoes are super expensive as it is where I live you can just use regular potatoes, like for more classic gnocchi. You can also try it with chickpea flour!
Depends on how you cope with stress. For some people cooking is a very meditative and soothing experience. For others alas it just adds to the stress of the day.

Not really. Last week I spent $1.78 for 8 sweet potatoes. So 55 cents for 3 doesn't seem unreasonable.
If you want similar results for even less time/ work, you can sub in canned pumpkin for the sweet potato.

Sweet potato gnocchi
Ingredients:
- [ ] Sweet potatoes
- [ ] Pinch of salt
- [ ] Flour
Sauce ingredients:
- [ ] Parsley
- [ ] Garlic
- [ ] Walnuts
- [ ] Lemon juice (or squeeze a lemon)
- [ ] Olive oil
Steps:
1. Add potatoes to parchment paper , stab them, and cook them at 213 Celsius.
2. Get that ✨sweet meat✨out and add ur pinch of salt :)
3. Add flour until it turns into a dough (knead , knead , knead)
4. Chop them into tiny pillows 😊
5. Cook them in a boiling water pot (with a pinch of salt) until they rise to the surface.
6. In the meantime, u can make ur sauce by adding parsley, garlic, lemon juice , olive oil, and walnuts.
7. Voila ur done

So, I just made this recipe today, and as a college student with my mom’s entire kitchen at disposal, I would not call this a low-effort or college friendly dish in the slightest. It took a few hours and many different kitchen utensils, bowls, and pans. However, I had good reviews from the family, and appreciate a healthy and few-ingredient dish to spice up the day, so thank you regardless.

We have our own version in Poland too and the main idea is to simply have something to do with leftover mashed potatoes. So you wouldn't make 'kopytka' (Polish equivalent) for kopytka, you would make them because you have a lot of leftover potatoes from yesterday's dinner. So day 1 - prepare more mashed potatoes, day 2 take leftovers, mix them with flour and egg and boil. And it basically cuts the preparation time in half, if you catch my drift. Cheers.

My question is how did you have the energy and time to do this while going through college? The cooking alone is exhausting and you're left with a lot of dishes just for one person 😅 anyway it does look good, if sweet potatoes are super expensive as it is where I live you can just use regular potatoes, like for more classic gnocchi. You can also try it with chickpea flour!
Depends on how you cope with stress. For some people cooking is a very meditative and soothing experience.
