- In this recipe video, I will show you how to make Japanese superfood and also fermented rice drink called "Amazake". This Amazake is made of Rice Koji (mold) and Rice Porridge, and is one of the Japanese vegan foods as well. This recipe video is the remake and upgraded version of my previous Amazake recipe. So this time, I will share three flavors. I hope you enjoy this tutorial and give it a try!

I tried amazake in yoyogi and loved it so i had to make it when i got back home. did a double batch and it turned out great, Thanks! my rice cooker didn't allow me to set a temp for the 6 hours so i used a Sous vide machine and that did the job just fine.

Sous vide cooking is also great for keeping the amazake at the proper temperature for 8 hours.

Thank you for sharing Yuca san, I am very curious how do you keep the temp consistent in this rice cooker? Do you consistently keep it at a rice porridge mode to keep warm? And if you can make it to pudding like? if yes, what do you usually add?
Simple and healthy delicious. Diabetic people, can we make amazake without rice porridge ? Only Koji rice mold ,
I usually use rice porridge to make Amazake so I did some research. And it seems there are several ways to make Amazake from Koji rice mold and water only. In this case, you need to get the special koji rice mold that has the strong power. You can make Amazake with using Yogurt maker, or Pot & warm cloth or Rice cooker.

Amazake is superfood and should be fresh, I recommend to keep in the fridge for three days and a few weeks in a freezer.
Would this work with a standard push button rice cooker?
I push the rice porridge button and keep warm. Do you have rice cooker that has rice porridge menu function?
@@YUCasJapaneseCooking I just have a basic rice cooker that was a cook and warm feature. My husband had the fancier rice cooker when we got married and it's in the garage.
