Do you know about the nixtamalization process used for corn? I eat a lot of grits and just learned about it recently. It's been used by indigenous people for centuries. It's soaking the dried corn in an alkaline solution before using to unlock the nutrients in it. Otherwise if you eat a diet based on corn you could end up with a disease called pellagra. The nutrients in some grains can't be utilized by our bodies unless the pericarp is removed through soaking. It's how traditional tamales, tortillas, masa harina and hominy are made. Pellagra was epidemic in the USA around 1915 because a lot of people didn't know this about corn. I found it all fascinating so thought I'd share!
Interesting…probably the same concept used in soaking legumes, seeds & nuts. I wonder if grinding the grain(corn) and having gut health/a healthy digestive system(hydrochloric acid) makes the difference. I know beriberi, & Pellagra incidences in the 1920’s were due to the removal & processing(removing 26+essential vitamins & minerals from whole grain’s,then adding 3 back, hence labeling it ‘enriched’)
I've been milling popcorn for grits and cornmeal for years. I also mill my own flour from wheat berries for the nutritional value as well as the taste and texture. I wish more people did, especially since it's so easy to do and popcorn can be found in most stores.
I tried it - worked great - thanks so much! These grits are so much better than the ones you buy in the store. I ground them up in a little coffee grinder. I'll be makin' them this way from now on!

Woooow randomly found this, I had no idea! So much info in such a short video! I always buy huge bags of kernels because it’s a healthy snack for my kids so I have them just sitting around. Now to see if I should try this on my blender or food processor, cuz I sure don’t have a vitamix 🤗💜
Hmm...by hi-speed blender I was thinking this lady has a Vitamix,....correct! So then a regular blender, would probably get burnt out, so checking to see if I can get the Vitamix here in Mexico,....WOW! That plate of grits with the fried veggies, pat of butter and some red chili sprinkled on top is 5 Star FOOD PORN! 😋👍
OK, the question is the sift part of the grits, corn meal flour? So the grits are the corn meal with the "gritty" parts. BTW, you can buy organic popcorn that is not herbicide tolerant.
I like this video but the only thing I can say about it is if you don't want things altered grow your own corn. They have been altering corn for years.
I had some corn 🌽 kernels that was sitting around and when I went to make some 🍿 it no longer popped. Someone said let it sit in a mason jar of water but the kernels never revived. Do you know if their inability to pop was an indication that the minerals were loss? I want to try making my grits this way but I know the kernels on hand ain’t popping

I used organic popcorn kernels. Turned out great! Also used the kernels to make meal for frying fish.

I made vegan Parmesan cheese from ground popcorn. Tasted it and if it didn't taste like grits!!
bioengineered is GMO, which most corn in UA is. Just make sure yr popcorn is Non-GMO, too.

Did you use one cup of water to one cup of ground corn when cooking?
I used 1 1/2 cups water to 1 cup grits & I cooked 20 minutes on low..since it’s not processed & is a whole grain.

Are the kernels non-GMO? Did you soak to see if the kernels will sprout? If the answer is yes on either of the two questions, I would still use them.
