  • Learn how to forage and feast on hen of the woods mushroom, Grifola frondosa! In this 11 minute video, Raleigh mushroom expert Karl Knudson shows us a 20-pound hen of the woods mushroom and explains how to find this spectacular fall mushroom. Also called maitake, Grifola frondosa grows at the base of very old oak trees and comes back faithfully year after year.
    Hen of the woods mushrooms can grow to be enormous, with overlapping fronds of flesh with porous undersurfaces. Despite their size, Grifola frondosa can be very difficult to spot. But with some tips from Karl, your odds of finding one of these beauties yourself is sure to skyrocket!

    Great block of instruction on the Hens.
    It's so dry at my lease in Richmond County even the omnipresent Amanita are scarce.

    Very nice find! I found two of these about a month ago, but the flies had already got to them and there were just too many maggots to deal with. Like it was said, they come back every year and this was the second consecutive year I found some at that tree. Thank you for always keeping the channel interesting! 😊

    Beautiful! Thank you both for your contribution to the community. I appreciate your input and knowledge, I’ve learned a great deal from watching your input. I was just north of Raleigh last weekend and found my first maitake. About 5-6 lbs, someone unwittingly destroyed an additional 5-6 lbs. He/she clearly didn’t appreciate the value. The oak that we found it on could easily be well over 300 years old, It’s been over 50 years since I played on this tree as a child. We harvested the hen and freeze dried it for future use. Super exciting find, looking forward to next year…

    When you find a cluster this big that’s still prime for eating you know you got a good couple of weeks ahead of you lol. Edit do you get any of the blue chanterelles down there? I’m fascinated by them, but they are so rare here in Michigan.
