    I just saw your channel and all your cakes look delish! I bake a lot of yeast type recipes as well as cakes and cookies and just wanted to add my experience to measuring ingredients. First, I learned the spoon flour into measuring cup then level off from King Arthur website. It is the proper way to measure flour. A little story to show how far off the two can be...A friend and I saw a recipe we both wanted to make. (This was actually a yeast recipe so the correct measurement is even more critical. Hers came out great using the recipe amount of flour and I had to add MUCH more flour to be able to make a proper dough. When we talked later, we realized that she measured her flour with the scoop method. In this particular recipe the author also used the scoop method which is why hers came out the same as the author. So, what I am trying to say is that in a recipe it would be extremely helpful if the author states which way they measure their flour. Someone with less experience as I with making dough would've had a horrible end product because they wouldn't have known my sight and feel that more flour was needed. This is one reason why it is MUCH more accurate to weigh flour. The other reason it is best to weigh flour, is because different brands of flours can actually weigh and measure differently! Crazy, huh? I realized how far off measurements could be once I began to weigh my ingredients. Also, once I got the hang of using the "tare" button on my scale, I realized how much faster and easier it was to weigh ingredients. For a decent scale in Amazon is around 12.00. Not too bad. I've only seen one of your videos besides this one, but I will check more if them out...thank you! I subscribed also! 😊

    My mother (who was a professional baker) ALWAYS sifted her flour BEFORE she measured it. Also, she used cake flour.

    Thanks for that Kara! I first read about proper flour measuring on a bread making site many years ago. It was news to me that no one had ever told me. One thing I do is whisk my flour in the container before I start scooping it out into the measuring cup. A little over kill perhaps, but my cakes turn out well. :)
