Doubled the recipe and divided into three 8'' (20 cm) pans. Baked at lower temp (160 C - 320 F) using convection oven for 55 min, yielded beautiful layers. Batter is thick. Genius recipe. Thank you so very much Emma!
I too, use only stabilised whipped cream icing as I find fondant too sweet. I am a new home baker. Will be trying buttercream and Swiss meringue buttercream next.

I am drooling over here! Looks absolutely fabulous! Regarding the alcohol in the soak, what brand of alcohol do you recommend and besides jam or jelly, could you use something that has no alcohol taste? Something similar, but without the alcohol? Maybe a lemon or some sort of extract? I’m not a fan of vanilla with an alcohol soak, and I know my child wouldn’t like that either. If we bring this to a family event (or if I just can’t wait and need to indulge at home 😂) what is your best suggestion for a substitute? Thanks!
In Australia and I am from an Italian background we call Pastry Cream = Italian Custard and the cake is more a Sponge here but yours is more of a cake than a sponge by the recipe. The syrup here is normally the juice from a can of fruit mix and we add Sherry or Strega or just the fruit juice. We also add something else to each layer and there is two options but I am keeping that a family secret. I already gave one away. LOL Plus with imagination you could go nuts. :) Good Job Bella!

Great tasting cake...thanks Emma! I made I with a layer of blueberry spread vs rum (was going to try anise, but thought it might be too strong for this cake..?). I messed up my mascarpone frosting and did the final with whipped cream only...but still good.

Today im making a pinacolda cake and will be doing your coconut cake, fill it with you mascarpone whipped cream and pinepple filling just as you made the cherry one. Will add coconut rum and fresh pinapple and hopefully will turn out good. Anyways would love to see your version of pinacolada cake!!! Hugs
