I'm Boone Bake.
Today I made a vanilla cake without flour.
It is aka gluten free vanilla cake.

There are many people who can't eat flour, and the last time they said that the chocolate cake was very tasty, many people asked for a vanilla cake.
So, I made a cake with those that can be eaten by those with gluten intolerance.
This vanilla cake is also very tasty.
I like this vanilla cake so I think I will use it often in the future.
When I put strawberry chips on the side, the color was so pretty, and the taste and scent were also great.
I made with chopped nuts on the bottom of the cake.
It had a rich texture and it was perfect.
But for those who have trouble, it's okay not to make it.

What is Gluten?
This is a by-product of wheat starch, a protein that is insoluble in water, and is a unique property of flour.
Gluten is difficult to digest and can lead to gluten intolerance.
Flour has about 70% carbohydrates and 10% protein.
Among these proteins, there are gliadin and glutenin, which account for about 80%.
When kneaded with water, gliadin and glutenin combine to form a net structure.
This is our favorite chewy gluten.
Among modern people who enjoy wheat-processed foods such as bread, sweets, noodles, and fried foods, they suffer from gluten-sensitive bowel diseases such as indigestion due to gluten, an insoluble protein contained in wheat.
Intolerance is a reaction that our body rejects and cannot absorb nutrients when nutrients enter the body. Symptoms of gluten intolerance, which are representative examples, include digestive problems such as bloating and abdominal pain.
Gluten-sensitive bowel disease is a symptom of lack or lack of an enzyme that digests gluten.If a person who cannot digest it well, ingestion, the intestine is stimulated and the protrusions of the intestinal mucosa atrophy and nutrients cannot be absorbed.
That's why people with gluten-sensitive bowel disease experience the inconvenience of having to adjust their diet for life.
I live in Korea, Japan, etc.. In the Eastern world, there are not many celiac diseases, but in the United States, which is a staple food of wheat, 1% of the population is said to have celiac disease, so many people cannot eat wheat. There were cases.
So today I made a gluten free vanilla cake to enjoy a delicious vanilla cake without flour.
● Ingredients
237ml = 1 cup
15ml = 1Tbsp
5ml= 1tsp
● Cake finished size (18cm*6.5cm, 1 piece)
● Vanilla cake without flour
(Mold size: 30cm*40cm)
90 g white chocolate (1/2 cup + 1 Tbsp, chopped)
40 g unsalted butter (2 Tbsp +2 tsp)
30g Heavy Cream (2 Tbsp)
4 yolks (72 g)
12 g sugar (1 Tbsp)
4 ml (1 tsp) vanilla extract
A pinch of salt
16 g corn starch (2 Tbsp + 1 tsp)
16 g almond powder (2 Tbsp)
4 egg whites (140 g)
60 g (1/4 cup + 1 Tbsp) sugar
● Dark vanilla white chocolate cream
165 g (1 cup) white chocolate
80 g (1/3 cup) heavy cream
3 g (1 tsp) unsalted butter
20 g condensed milk (1 Tbsp + 1 tsp)
5ml (1 tsp) vanilla extract
370 g (1 cup + 1/2 cup + 1 Tbsp) fresh cream (80% whipped)
● Crispy Almond & Hazelnut
30 g milk chocolate (3 Tbsp-chopped)
10 g (2 tsp) unsalted butter
80 g Nutella (3 Tbsp + 1 tsp)
30 g hazelnuts, chopped (2 Tbsp)
25 g (2 Tbsp) almonds, chopped
30 g (3 Tbsp) rice qroqant
● Strawberry chips 20g
( Strawberry chips that are frozen strawberries rapidly and dried in a vacuum)

I'm not even sure if I'd make this for my husband. Mostly because I'd go through the effort of making it for him to say it's just "okay".
I agree. I took one look and fled. But maybe that was the white chocolate, which I loathe. I don't even like milk chocolate. When I looked after my late SIL she insisted she was allergic to gluten and dairy (which she wasn't) claiming they made her nose run, though she was far less snotty than I was. I don't know how many times I told her I wasn't equipped to deal with gluten free diets.
It’s a LOT of faff to make. Definitely a very special occasion cake for someone you loved. A LOT! 😄

Hi Boone Bake , I browsed through your channel's Playlist trying to shortlist some easiest recipe, but I cannot tell from the cover pictures alone if they have less procedures and I realise I have to watch each video through one by one just to know by the end or at some point of the video, that I don't have all the tools/ ingredients or that there are too many procedures for my level to manage!
May I suggest to you to select and include an " Easiest Recipes " or " Recipes for Beginners " category in your Playlist for people who only have little time to make a dessert or beginners like me who are slow to execute every procedure ?

The amount of time and energy put into this cake....I would want to keep and eat it all by myself. This looks beautiful and tasty. I never seen dried strawberries. Are these dehydrated and then just chopped up? I suppose fresh strawberries would be too wet and the obviously wouldn't adhere to the sides. Lovely video...thanks for sharing.

I can’t wait to make this! I am gluten-intolerant and my family typically eats gluten free along with me. They will love this. I think I will add a hint of a lemon flavour to the ganache and leave out the chocolate hazelnut crust to make it taste a little lighter and more summery. Thank you so much!

It's a really easy bake and turns out exactly as shown. Give it a go. I couldn't find strawberry chips so made my own. I sliced 1lb (450g) of strawberries and placed on a thick baking tray lined with parchment (I did a tray of raspberries and one of brambles - blackberries - at the same time, left them whole). Popped them in the oven and let them dry out at 80°C for two hours. When cold I blitzed them in the processor, not too finely. Worked perfectly. Also works with pineapple, mango, apple, peach etc.

I learned this recently and thought that this could help a fellow gluten free friend, if you already knew this, then I'm sorry for being repetitive
You can whip yolks with a bit of warm water and it whips up as much as whites!
When I tested this I did it with 4 yolks and ¼ of a cup of warm water. I was surprised with the result.

I would pay someone to make that cake for me, and let me watch while it's done. And then most surely I'd need an ambulance, because I wouldn't be able to stop at one piece, and the whole cake must have a gazillion calories! But it would be soooo worth it.
Make sure that the ambulance has an oxygen respirator.

Luscious. And elegant. I will have to try making this for our ladieds' tea on the lake. I have a friend who is gluten free and allergic to dairy and nuts so I will have to experiment for her. Might have to use more dried strawberry and coconut whip cream in this.🤔
