The pitch is locked in serato. He's adjusting the speed of the sample so it matches the beat. He doesn't need headphones because it's a routine he's rehearsed a few times, so he knows what speed it needs at what places :)
The sample I cut up is a record from 1974 with no drum machine or quantizing. The roll after he says "Let me show you something" is faster than the beat that comes in after it, so I practiced riding the pitch to counter the real drummer over the straighter sequenced Preem beat [although the fill on that is a bit loose (in a good way, so funky)]. I could have made an edit to time stretch the song (and in some cases it might be better), but before I opened up Ableton, I just tried to ride the pitch and it felt good. If you can leave the natural elements in there, it's the best! A lot of times that's where the funk is at. I tried this through a few times, made an arrangement, and recorded it.

record using a GoPro, record the audio in Serato, then line up the audio in Adobe Premiere Pro. I mix a bit of the GoPro live audio with the Serato audio to give it some live room feel, about 80% Serato feed, 20% GoPro
