I make my white the same way. The longer you cook candy, the darker it gets. Stopping it at 280 is perfect. I've learned that from experience. Cooking candy to 300 for white apples, you'll have to use a ton of white, which can alter the taste drastically.

I love ALLLLLLLL!!!!! your videos Simple, Beautiful, and Perfect Everything I follow your instructions and recipes., Will you please answer my question whenever I have a order for apples, it's for 30-40 apples, I only use your recipe, the full batch recipe 4 cups sugar etc., I could not for the life of me figure out why I kept getting off-white apples until I found your white apple video, by the way the red, gold, and black ones everyone went crazzzy over. My question is can I continue to use the full batch recipe stopping at 280 degrees? or Use the recipe in this video only? if so can I double the recipe in this video, since I always have large orders?

They use granny Smith green apples because they're tart and cut the sweetness from the candy coating. They also hold their crunchiness better and longer w the extreme heat of the liquid candy. @radha ganeriwala

Ro....!! Been watching for a few weeks and think that you have exceptional talent. So today I tried your basic 1/2 recipe for 3 pink apples. Cleaning and preparing my apples using your directions went great. My first pink apple was beautiful. My second was terrible and there was no third. After the first apple, my candy hardened into a cloudy mess. What did I do wrong? :( And do you have an easy way to get the hardened candy out of the pot when done? I think I just about drained out the hot water heater running the water to clean the pot. ;) I would like to try again but now I'm a little nervous. Please share your wisdom. Lisa

    • @tiffanycook3666

Lisa the easiest way to clean the pot is to put water in it and bring it back to a boil on the stove. The candy will liquify and u will be able to just pour it down the drain.
