Crispy Pork Shanks / Pork Knuckles Cooked in Oven / German Oktoberfest Sweinhaxe - Recipe # 95

- Watch this easy recipe for how to cook the classic Oktoberfest meal: Crispy braised pork shanks! We cook with plenty of vegetables, German beer and stock for an intense sauce on the side!
Ingredients for 2-3 persons:
2 pork shanks
salt for rubbing the shanks
2 carrots
2 onions
4 cloves of garlic
1/2 liter of Pilsner beer (19.2 fl. oz.)
a bit of stock (vegetable / chicken / veal...)
bay leaf
freshly ground black pepper
For finishing the sauce:
a mix of flour and water (2 parts water to 1 part flour)
freshly ground black pepper
a splash white whine vinegar
Serve with cornichons / sweet & sour pickles and boiled potatoes

My two recommendation, never throw out the overcooked carrots and veggies, blend those into the sauce. Also, even though pork knuckles have plenty of oil of their own, sometimes a drizzle of olive oil on the skin and/or basting the outer skin with the rendered fat helps crisp up the skin, when you toss on the broiler. I usually do pork shank/knuckle in the crockpot, then when I want to crisp up the skin, use some butter/olive oil. Looks delicious, but please don't waste food, especially those overdone carrots. 😊
