You will not regret it. If he's going too fast for you to keep track of the ingredients he has the recipe on his website. When he said using olive oil instead of herb oil doesn't really matter DO NOT LISTEN. The herb oil makes a world of difference. Been there done that. The chicken parm ball recipe on his website includes the herb oil recipe.

I tried chicken meatballs before, but they always come out dry due to the chicken's low fat content I think. The addition of oil was what I was missing from the equation.

Instead of using store bought sauce, make your own. Get a can of crushed tomatoes, about a head of garlic (more or less, it's up to you), and oregano. Finely mince the garlic and add it and an amount of oregano you like to the crushed tomatoes and cook over low heat, stirring it every so often.
People are complaining about it being vertical, but I am more confused on how he filmed with an iPhone whilst using both hands. I’d love to see the contraption he made for that.

I'm going to ignore the hullabaloo about the filming and ask about the cooking. When you add the tomato, are you trying to keep the sauce from directly contacting the pan, or does the amount/technique you're using keep the sauce from attacking the seasoning on the cast iron?
I've heard acidic foods can eat away the seasoning but it's never been a problem for me. Whenever I make this stuff I practically drown the meat balls in sauce. Then again I probably soap scrub and reseason my cast iron more often than needed.
