you still need to remember that the added extras can change the final results by adding more moisture like Bananas and coconut soaks up moisture and would make them dry if you don't adjust the amount of liquid. but good video

Can you replace veggie oil with avo oil?
I did not try it but I think it will work too.
you didn't coated the added fillings with flour wouldn't they sink in the bottom
IMHO if the batter is thick enough and you are going from mixing to cooking in 10 mins it should be ok.
