    2 (5 ounce) cans boned chicken or turkey, or equal amount leftovers
    1 (10.5 ounce) can condensed cream of chicken soup
    1 (6 serving size) package chicken flavor stuffing mix
    1/2 Onion, diced
    3-4 Celery stalks, diced
    Olive oil
    3 Cups mashed potatoes, prepared
    1 Cup frozen vegetables (optional)
    Make mashed potatoes your normal way. Combine poultry, soup and vegetables in a bowl. Sauté onion and celery in olive oil until soft. Prepare stuffing mix on top of range or in microwave according to package directions, add onion and celery; place in baking dish. Spread mashed potatoes over stuffing. Top with soup mixture and cook in preheated 350 degrees oven for 20 minutes.
